Chim Cut Roti Recipe: Vietnamese Quail with Soy Ginger Glaze Recipe

As I've mentioned this before, there are a lot of Vietnamese takes on French dishes. This quail dish is called chim cút rôti; the mustard, coriander and white wine normally found in the French version have been replaced by red chili powder, ginger and soy sauce.

My favorite part is the sweet ginger glaze made with honey. I always end up eating with my fingers.  It may not necessarily be polite, but it's so delicious I wouldn't want to miss a single bite!

Bun Bi Chay Recipe

Bun is a popular Vietnamese meal, which consists of rice vermicelli noodles, shredded lettuce, bean sprouts, cucumber, a protein element and dipping sauce. Bun bì chay is a vegetarian version that replicates shredded pork by using fried sliced jicama and fried tofu.

This is an ideal and very refreshing hot weather dish. The preparation is labor intensive, especially with chopping and frying, so I usually make a large quantity. It's delicious and keeps for a few days, so it's definitely worth the effort.

Vietnamese Braised Catfish in Fish Sauce (Ca Kho) Recipe

Cá kho literally translates to "braised fish". I cooked catfish steaks in a caramel fish sauce and let simmer until the delicate, flaky fish became an opaque white color for this fairly common Vietnamese dish.

I served the seafood dish with brown jasmine rice and leafy greens. I'm on day 2 of my "back-into-shape" plan, but don't worry, flavor is not being sacrificed!

Roasted Red Pepper Risotto (Ajvar Recipe)  Recipe

This risotto recipe gets its rich flavor and color from ajvar, a Serbian mix of puréed roasted bell peppers, eggplant, garlic and chiles. It’s very versatile, easy to make and stores very well.

I prepared the sauce a day in advance. You'll likely have some leftover ajvar after making the risotto, which can be used on toast or as filling in puff pastry appetizers.

Red Snapper en Papillote Recipe

Red Snapper en Papillote

Today I cooked a freshly caught whole red snapper en papillote. The preparation is ultra easy. Simply combine garlicky, spicy (my homemade chile garlic sauce), slightly sweet (Jack Daniel's grilling sauce), salty and fatty ingredients (oil or butter) to make the marinade. Cover the fish with the sauce and after a 30-minute steam in the oven, you'll have a healthy and tasty meal. You'll also have time to do something else (in my case play with my 5-month-old infant daughter!).  

Spending less time in the kitchen doesn't necessarily means eating a less delicious meal!
