Perfect Filet Mignon Steak Recipe Recipe

This type of preparation is my favorite way to go when I buy an amazing quality cut of beef, such as filet mignon. I simply seasoned both sides of the filet mignon with salt and pepper, pan-seared until a crust formed and completed the roasting in the oven.  

The key to perfection was to let the meat rest for a few minutes before slicing. The last step was making a sauce au poivre (whole peppercorn sauce) and placing the slices of beef on top like a fan. This was heavenly scrumptious. You can pair the meat with your favorite potato side dish, which can be found in my first cookbook, Haute Potato available from Amazon and Barnes and Noble.

Pea Soup Topped with Pasta Chips Recipe

I may sound like a broken record, but I try not to waste food. In Vietnamese, it is tội chết: "dreadfully sinful" to waste. Yesterday, I had a little bit of leftover boiled bow-tie pasta. The quantity was too little to serve as a main dish, so I seasoned them, deep-fried them and served them as chips.

To ensure everyone enjoyed the small amount of chips in equal portions, I used them as crunchy toppings for pea and leek soup. You could serve them as appetizers for a buffet-style party (maybe next week for Christmas Eve) in mini shot glasses. A sprinkle of curly parsley is more than enough to provide an elegant final touch. 

Waste not, want not!

Truffle Mushroom Risotto Stuffed Baked Apples Recipe

This is an upscale version of risotto that you could offer as a side dish (or main vegetarian course) on Thanksgiving. I love including lightly sweet ingredients in savory dishes, so I came up with the apple and mushroom risotto. I used Jonagold apples, brown mushrooms and truffle butter. 

I think making individual servings give a more elegant look to the dish, so I nested the luxurious risotto in baked apples. The apples almost turned into apple sauce which paired beautifully with the risotto.

Roasted Cauliflower Pumpkin Soup Recipe Recipe

I hope it's not going to be too cold next Thursday for our family gathering. But I'm keeping this soup recipe as a “maybe” in case the temperature drops too much and we crave something soothing and warm. 

To ensure the soup keeps up the Thanksgiving theme, I used a combination of fall-friendly veggies like pumpkin and roasted cauliflower. I also added duck prosciutto for texture and thyme-infused whipped cream for extra creaminess.

Roasted Butternut Squash Orzo Recipe Recipe

This orzo pasta dish can either appeal to a vegetarian as a main course or to others as an accompaniment for the meat or fish course of the meal. And the ingredients make it perfect for Thanksgiving.

To make the dish, I simply roasted a butternut squash, mixed in cooked orzo pasta and added a wide range of vegetables such as carrots, sun-dried tomatoes, artichoke hearts and string beans, as well as pan-fried tofu cubes for extra protein and dried cranberries to bring home the autumn-theme of the meal.

This sweet and tart side dish can easily be prepared in advance. All you have to keep in mind is to cut all the ingredients the same size for a homogeneous texture. I also tried selecting various colors to make the dish look appealing.
