Filet Mignon Appetizers with Tomato Chutney Recipe

We recently hosted a formal dinner partiy and I wanted every single dish to taste extraordinary, so I prepared over-the-top filet mignon appetizers to start the evening. I layered the bite-sized starters with puff pastry, Indian-inspired tomato chutney, ash-ripened chèvre and the pièce de résistance: a decadent slice of medium-rare filet mignon

My favorite part was to see the reactions of my guests during the party. You don't need to use a whole lot of the sophisticated meat; a thin, dainty slice of the steak is enough to impress your crowd. I sealed the deal with a good glass of red wine and carried on with the (I hoped!) eye-popping menu.

Quinoa Stuffed Portobello Burger Recipe Recipe

Yesterday, we hosted another dinner party. I opted for a fancy-looking vegetarian course by serving red-quinoa stuffed Portobello burgers and topped them with a slice of grilling cheese. The quinoa provided protein (it has, according to Wikipedia, a protein content per 100 calories higher than brown rice, potatoes, barley and millet), the Portobello mushroom great texture and the Mediterranean grilling cheese subtle saltiness with a rich buttery taste. 

I love using grilling cheese. Since I didn't add any rich ingredients in the Portobello burger filling, I figured a thin slice of cheese wouldn't hurt. This particular cheese can withstand a tremendous amount of heat without melting and develops a delicious golden crust when grilled, so next time you're searching for a crisp topping for your dishes, this might be the one!

Roasted Lamb Banh Mi Recipe

We recently had roasted lamb flavored with pomegranate. As usual, I used the leftover meat the following day and prepared my favorite sandwich, a bánh mì  of course! You can find the recipe for the baguette, lime mayonnaise and Vietnamese pickles in my second cookbook, aptly entitled Banh Mi.

I have to admit a lamb bánh mì  is not “authentic”. Having said that, bánh mì is an adaptation of the French baguette sandwich. When the French left Vietnam, some of the ingredients such as the cornichons (French small gherkins) became so costly, they were substituted with local food items (pickled carrots and daikon with cilantro and sliced green chiles). The fillings can be tailored to suit your favorite flavorings. Adaptation and experimentation are why we have the foods we have today, so get in the kitchen and have some fun!

Shrimp and Crab Eggrolls (Cha Gio Recipe) Recipe

We're two days away from Tết (Vietnamese New Year). Every year, Maman's specialty was to prepare eggrolls. In my opinion, she makes the best eggrolls (chả giò in Vietnamese) I've ever had. Of course, I'm a little biased. To find my mom's authentic recipe, check it out in my second cookbook Banh Mi.

For this version, I prepared a seafood filling with shrimp and crab and loads of flavorful mushrooms. I've posted a vegetarian version in the past for you if you need it. 

The countdown is nearly over and we'll soon be starting the year of the horse!

Shrimp in Pomegranate Sauce

I've become addicted to pomegranate lately and I figured if it was good in a spread, it would go just as wonderfully with seafood because of its sour, tart and slightly sweet flavors. 

First, I sautéed the shrimp in garlic until fully cooked, then covered them in a thick pomegranate sauce, which consisted of fresh pomegranate seeds, of course, and caramelized onion puree. The onions helped balance the sweetness of the sauce while also giving it a thicker texture.
