Vietnamese Egg Roll Recipe (Cha Gio) Recipe

Just like the vegetarian eggroll recipe, the meat-filled version is perfect as an appetizer when you have a big party. It's also a great way to get the little ones acquainted with cooking. It's one of my earliest memories of being in the kitchen.

Preparation is fairly simple and will resemble an assembly line. The filling is essentially mixed together raw and then it's on to assembling, folding and frying.

My littlest sister-in-law turned five this week and we're going to have a birthday party this coming weekend. We're making the mini variety for this occasion because it's a better size for the kids and all around works great as an appetizer. We'll be making between 100 and 200 eggrolls and I guarantee that there won't be any leftovers.

Asparagus Risotto Recipe Recipe

Asparagus Risotto Recipe

06.12.09 by Jackie

I recently made a rather unconventional risotto with bamboo. I chose bamboo because it has a very similar texture to asparagus, which is a very traditional element in risotto. You need to know the classics in order to come up with your own twist.

Lulu had a craving for the starchy arborio rice dish. Asparagus are in season so I thought it was the perfect opportunity to please my hubby and to share this recipe with you. Enjoy!

Angel Hair Pasta in Roasted Tomato Pink Sauce Recipe

Angel hair pasta is a round-rod pasta and is the thinnest vermicelli noodles. I like to simply sauté it in butter and pair it with roasted tomatoes. I add grilled eggplant to give a meaty texture to the tomato sauce and also add a "hint" of cream to make the dish richer. If I haven't said it enough times, that's why they invented treadmills.

I made this today because my uncle came over for dinner. He became a vegetarian more than 10 years ago, even though he was an avid carnivore before. He eats tofu every day and always tells me how much he craves pasta (his wife cooks Vietnamese food exclusively). So I made his favorite dish accompanied by a pink tomato sauce. For dessert, I made another favorite of his as well: chocolate lava cake. I think he enjoyed the meal but by the end he was complaining: "Jackie, my cholesterol, my cholesterol". Ehh, he ate it all...

Tandoori Glazed Roasted White Sea Bass Recipe

Tandoori paste is a true culinary chameleon. In Indian cuisine, it is commonly used with chicken in the eponymously titled dish. But there are so many more possibilities. We just purchased some sea bass for a dinner party, and I thought it would be the perfect opportunity to marry the very strong blend of flavors in the tandoori paste with the rich, buttery texture of the sea bass.

Speaking of marriage, the idea for a tandoori glaze came to me after our wedding reception menu tasting. It was almost 5 years ago. How time flies! Anyway, our caterer gave us a lot of samples to taste before the big day. One of the options was a hoisin glazed roasted Chilean sea bass. It tasted wonderful and it got me thinking about other "ethnic" flavors to marinate the fish.

Goat Ricotta Cheese and Pine Nut Stuffed Baby Zucchini Recipe

I typically serve stuffed zucchini as a side dish. It is very similar to my eggplant rollup recipe. It's very creamy and hearty and is a great accompaniment to red meat, such as a steak or some lamb chops.

What I love most about this dish is that it looks very healthy. But appearances can be deceiving. The green zucchini is the perfect cover for all the cheese and pine nuts that are stuffed inside. It may not be that good for you, but it surely is good. If you still feel guilty after eating this or any other of my recipes, do what the French do: chase after a bus, a train or a metro. I did this for the first 24 years of my life. If that's not possible, you can always go for a walk.
