Pasta Primavera Recipe

What makes this pasta primavera so flavorful is that the vegetables are roasted, so their natural sweetness bursts and they remain the main focus of the dish. I cooked onions, zucchini and summer squash until they caramelized, then added a variety of colorful tomatoes. I boiled some spaghetti on the side and as soon as it was cooked, I tossed the pasta with the roasted vegetables and topped it off with a sprinkle of Parmesan cheese.

You could prepare this dish with any kind of vegetable or herb, but I just used what was ripe in our garden. And it tasted fantastic! Who ever said healthy and tasty couldn't go hand in hand?

Spaghetti in Spicy Tomato Sauce

I'm not a professional cook and I always appreciate learning something new. Recently, I posted a recipe for cacio e pepe, and one of the readers, Julio, told me I wasn't making it the right way. I decided to follow Julio's instructions on how to cook the spaghetti. The preparation was very simple: the pasta was cooked al dente and grated cheese and pasta water were added. I sprinkled a little freshly cracked pepper. To add a little twist, this time I topped the pasta with a spicy tomato and eggplant sauce.

The results were spectacular. Thank you so much, Julio for your much needed piece of advice! The sauce is optional but I think it makes a complete meal, and adds a little heat that lingers plus a kick just at the end. Perfecto!

Cacio E Pepe Recipe

When it comes to pasta dishes, Romans are experts. With only a few ingredients, they are able to produce incredible creations. Cacio e pepe is a perfect example. Spaghetti is tossed in a simple, creamy Pecorino Romano and black pepper sauce. The level of flavor achieved with only a handful of ingredients is mind-boggling.

My husband Lulu and I recently took a very romantic trip to Rome, Italy, so I thought it would be nice to share some pictures. The city is very small (a few square miles) and I felt like we walked every square inch. The upside is that we were able to try a lot of restaurants all over the city. We discovered a lovely one called Mario's, located on a small street behind the Roman Ruins. It doesn't attract a lot of tourists because of its off-the-beaten-path location, but we noticed a lot of locals. We were so impressed by the quality of the food that after trying several other average restaurants, we ended up eating at Mario's for the rest of the trip.

Lulu and I spent only a few days in Rome and then returned to Paris, where I tried to replicate the delicious pasta dish. To make it more luxurious, I added a few pieces of black truffle I found in an open air market. Lulu loved it!

Roasted Asparagus and Fresh Morel Pasta Recipe Recipe

Roasted asparagus pasta with fresh morels (pâtes aux morilles fraîches et asperges vertes) is a creamy, rich pasta dish. How could it not be delicious? First, I sautéed the morels in butter, added a white sauce (béchamel) mixed with crème fraîche, then tossed spaghetti rigati in the sauce. The final touch was roasted baby asparagus for contrast of color and some crunch, and lemon to cut the richness of the sauce. I chose baby asparagus because it most closely matches the thickness of the pasta and you can eat the whole stalks.

It was a perfect meal for a romantic dinner with my husband. I'm trying to be better about my eating habits, so I served smaller portions with a big salad. Eating right doesn’t have to mean giving up the foods you like. In fact, I think we have a better chance of maintaining healthy eating habits if we’re enjoying our meals. So enjoy this pasta; it might even help you lose weight!

Veggie 'Meat' Balls with Spaghetti Recipe

I'm always faced with the same dilemma when it comes to making dinner for Lulu. I try to make a meat-less equivalent for the vegetarians in the house. Today I cooked meatballs for dinner, which Lulu and his sisters obviously don't eat. I decided to try my hand at making veggie meatballs. The veggie balls are nut-free and egg-free, which is perfect for my 9-year-old-sister-in-law who has all those allergies. I didn't know what to expect, but the result was surprisingly pleasant.

You can serve the veggie balls as appetizers as well, falafel-style or in a sandwich à la Saad's. I serve them in a simple tomato sauce with wheat spaghetti.
