Asparagus and Zucchini Tofu Recipe Recipe

This tofu stir fry dish is a staple in our home and I make it at least one a month. It's quick to prepare, flavorful and packed with fresh green vegetables. 

The preparation is always more or less the same. In this version, pan-seared tofu pieces (or leftover cooked chicken breasts) are tossed with previously cooked zucchini and baby asparagus in maple syrup, chipotle garlic sauce and soy sauce. At the end, I added onions wedges and turned the heat off; the residual heat in the dish finished cooking the onions while keeping them juicy, sweet and crunchy.

We just purchased the tickets for our next trip to Paris. My best friend Alexia is getting married and I wouldn't miss it for the world. For this reason, my husband Lulu and I have committed ourselves to looking good and being healthy for the occasion. I've controlled the portion size of our meals and we work out as often as we possibly can. This morning, Lulu woke up early to play football with friends and while he was busy during his game, I whipped up a light meal for him.

I tossed hakka noodles (vegetarian wheat noodles made without eggs) with mock ground meat, julienned carrots, bell peppers and yellow onions. I served them at room temperature in lettuce cups and added sweet potato shoestrings as a crunchy garnish. Whenever I make a dish, I try to balance the textures and colors, which I find key to the success of any meal. The sweet potato shoestrings, in particular, are extremely versatile and can be used as the crunchy element in many savory dishes. They didn't quite make my first cookbook, Haute Potato, but I still highly recommend trying them. You'll end up eating them by the handful!

As I mentioned last week, I will be posting a vegetarian dish on "Meatless Mondays" and a scrumptious dessert for the weekend. I figure one will cancel out the other. Last weekend I shared a Meyer lemon mousse in wonton cups, and this week, well you'll just have to come back on Friday and see!

Pattypan Squash Salad Recipe

The vinaigrette for this fresh pattypan squash salad is a blend of chives, parsley, oregano, tarragon, thyme, a bit of mint, garlic, onion and lemon finished with a drizzle of good quality extra-virgin olive oil. You could serve this salad nicely as a side dish; it goes quite well with grilled chicken, for example. Pattypansquash goes by many names. You may recognize it as sunburst squash, cibleme, scallopini squash, custard squash, scallop squash, button squash or summer squash. No matter the name, pattypan squash makes a pleasantly sweet and refreshing addition to just about any salad or grilled vegetable medley. Vegetable Tian Recipe: Zucchini and Tomato Casserole Recipe

A tian is a Mediterranean dish, more specifically from Provence, which consists of thinly sliced vegetables slowly roasted in the oven. It could be made with any seasonally available ingredients such as artichokes, asparagus, eggplant, potatoes, broccoli, carrots, celery or mushrooms. I've also seen it made with meat or fish as well, but today I made a version that is very popular. It consists of garlic, tomatoes and zucchini, which happen to be fresh from our garden. 

I arranged the three ingredients in a terra cotta dish and drizzled on a little olive oil with freshly chopped herbs. The dish is very easy to prepare, and tastes as good as it looks. Quinoa Stuffed Zucchini Recipe

Quinoa stuffed zucchini is not only a delicious and colorful dish, it's also very healthy. I flavored tri-color quinoa with grilled vegetables, grilled haloumi cheese and red beans. I also topped the dish with slices of sun-dried tomato chicken sausage. 

I was able to prepare this dish by using the same grill pan over our barbecue that I used to make yesterday's peach melba. I've included a review of the Technique grill as well, in case you're interested. If after reading the review you can't wait to get your own, I have some great news for you!
