Ricotta pasta is ideal for cold winter days when you're in need of good comfort food. Ricotta is very mild, so I boosted the flavor with parmesan cheese and braised fennel. For extra protein, I added white beans and pine nuts. You can use any shaped pasta, but I happened to have some trottole pasta in the pantry so I went with that. I find the shape so cute; they are corkscrew curled rings with a center stalk. 

I usually make this dish with mascarpone, but after all the decadent holiday treats we've been eating, I was in the mood for something light. Even though the pasta isn't bathed in cream, it's not lacking in flavor.

Pesto Palmiers (Basil Pesto Elephant Ears) Recipe

Pesto palmiers are quick and easy appetizers for an elegant party. I made these pesto palmiers bite-sized so that they would work well at a dinner party we're hosting tonight. I have to thank Rianne from Art of Dessert for her post that reminded me of how to make them. As she said, palmiers look incredibly fancy, but in reality are quite easy to make. On top of that, the puff pastry "logs" of palmiers can be frozen for later use. If you're storing frozen pesto cubes as I've suggested in the past, this is a recipe that you can whip up whenever you're in a pinch, and no one will be the wiser!

Savory Goat Ricotta Cheese Puffs Recipe

There are guests coming tomorrow, and as usual I had no clue about what to make. I scoured my pantry and found a bag of macadamia nuts, just waiting to be used. I made walnut pesto yesterday, and I didn't feel like making another pasta and pesto dish. As they say, variety is the spice of life. 

I think appetizers are perfect for dinner parties; they allow people to nibble without interrupting the flow of conversation. I often make some sort of mini puff pastry, and I thought a macadamia pesto would be the perfect filling. However, a traditional pesto would be too thin on its own, so I added some homemade crème fraîche and some goat ricotta cheese. As you may have noticed, I'm a huge fan of goat ricotta cheese, and I get it whenever it's available at the local creamery.

Today, I made the pesto and the dough, tested out and baked a couple of puffs in the oven for tasting. The smell was intoxicating, and it was really difficult to snap a couple of photos before everyone descended upon them. 

You can freeze both the pesto and the dough. If you often have last minute guests as we do, it's easy to pop them out of the freezer and bake them. Your guests will love them, and you'll be a rockstar without much effort!

Wild Rice and Orzo Salad with Maple Vinaigrette Recipe

This dish is really three recipes in one. I combined my wild rice, kidney bean salad and orzo pasta salad recipes together to make a light and healthy meal. The maple vinaigrette helps tie everything together.

I usually make orzo pasta salad for parties and picnics, but we've been having a heat wave here and we all felt like eating something cool. The addition of kidney beans for protein and wild rice for fiber makes the dish more of a complete meal. If you have some leftover roast chicken, you can dice or shred it and add it to the salad as well.

Goat Ricotta Cheese and Pine Nut Stuffed Baby Zucchini Recipe

I typically serve stuffed zucchini as a side dish. It is very similar to my eggplant rollup recipe. It's very creamy and hearty and is a great accompaniment to red meat, such as a steak or some lamb chops.

What I love most about this dish is that it looks very healthy. But appearances can be deceiving. The green zucchini is the perfect cover for all the cheese and pine nuts that are stuffed inside. It may not be that good for you, but it surely is good. If you still feel guilty after eating this or any other of my recipes, do what the French do: chase after a bus, a train or a metro. I did this for the first 24 years of my life. If that's not possible, you can always go for a walk.
