Spicy Mussels with Chorizo

I love seafood, and I’ve used that love as a way for me to eat lighter meals with less meat. Today, I made chorizo-flavored mussels. To ensure the dish doesn't turn out too fishy tasting, I used a bit of our homemade Habanero and garlic sauce, anise-flavor liqueur, shallots and salted butter. 

We ate the mussels with a large salad and served yogurt and freshly cut fruit for dessert. This meal was so delicious, I could eat it over and over again for the next few days!

Lobster Ceviche Recipe

This is lobster cooked ceviche style. I got the inspiration from our anniversary trip to Cancun several years ago. The concept is very simple: seafood is partially "cooked" by incorporating a citrus marinade. The marinade was made up of the usual key ingredients, lemon juice and wasabi.

What makes this chilled dish so refreshing is the added celery, cherry tomatoes, cucumber, green bell pepper, green Thai chiles and dill.

Vietnamese Braised Catfish in Fish Sauce (Ca Kho) Recipe

Cá kho literally translates to "braised fish". I cooked catfish steaks in a caramel fish sauce and let simmer until the delicate, flaky fish became an opaque white color for this fairly common Vietnamese dish.

I served the seafood dish with brown jasmine rice and leafy greens. I'm on day 2 of my "back-into-shape" plan, but don't worry, flavor is not being sacrificed!

Canh Tan O Recipe (Vietnamese Chrysanthemum and Shrimp Soup) Recipe

Canh tần ô is a very common Vietnamese soup. It consists of chrysanthemum leaves and shrimp balls in a thin broth. It's a very healthy, light meal. I added a few scoops of steamed jasmine brown rice to make the meal complete. 

I'm giving losing the baby weight another go, and this is my "day 1" meal. Wish me luck!

Lemon Butter Garlic Sauce Recipe Recipe

Lemon butter garlic sauce is a tasty accompaniment to artichokes.  Butter is used generously, in contrast to the low calorie and healthy artichoke.
