Grilled Pineapple with Coconut Syrup and Mascarpone Cream Dessert
We hosted a dinner party at home this evening. I wanted to make a "summery" tiramisu parfait, as opposed to the "wintry" coffee tiramisu I made in the past. I found some beautiful sweet Maui Gold pineapple and decided to add a refreshing twist to the classic Italian dessert. I added some fresh mint from the garden, some coconut, mascarpone and crème fraîche.
I served a wide variety of sweet petit fours and other desserts along with the pineapple mascarpone desserts. I know it was a hit because there wasn't a bit left. When everyone went home, I gathered 14 empty parfait glasses. It looked like the guests washed the dishes themselves. I'm definitely going to make this again!

Frangipane Petit Four with Raspberry Mascarpone Frosting
We hosted another tea party yesterday and I made some polenta tartlets and individual apricot pies. I had some leftover dough and almond cream from each, so I combined the two and baked them until they became dry. The result was similar to a "petit four sec". I had made eggplant rollups for dinner as well, so I used the leftover mascarpone to make a butter cream frosting which I then smeared onto each petit four. It worked like magic.
If an almond cream tart and a polenta tartlet had a baby, my frangipane petit four would probably be the result. Improvising with leftovers is a lot of fun. Sometimes it doesn't work out, but when it does, the result is true culinary innovation. If you have no other use for the leftovers, it's the perfect time to experiment and be creative.

Vegetarian Quinoa and Eggplant Caviar
"Chose promise, chose due!" This is a French expression that translates as promises are made to be kept.
As promised, this is the recipe of the vegetarian equivalent of fish caviar that I served my "vegetarian" dinner guests last night. I paired it with mini-crumpets and a little dollop of crème fraîche in between.
This recipe was inspired by the Tassajara Cookbook by Karla Oliveira, which is an excellent resource for vegetarian party food recipes. The quinoa grains and eggplant seeds resemble the original fish eggs. It is basically eggplant caviar, very similar to baba ganoush, mixed with cooked quinoa.
For more flavor, I topped it with an Asian-style mint and cilantro sauce that added a beautiful, bright green color.

Homemade Waffles
Waffles are a great way to say I love you. There is something about the warmth, the color and the texture of homemade waffles that is beyond compare.
We make them pretty often in our home, especially on weekends but they still maintain an allure that gets everyone in the house gathered around waiting in anticipation.
Maybe it's the steam coming off the waffle iron that is so mesmerizing. I don't know. What I do know is that if you make a plate of waffles smothered in butter and maple syrup for that special someone in your life, they will definitely appreciate it .

Savory Goat Cheese Panna Cotta with Beluga Lentil Relish (Panna Cotta au Chevre et sa Macedoine de Legumes)
Panna cotta de chèvre frais et sa macédoine de légumes is a summery dish. It was such a sunny day today in the Bay Area, so I decided to make something refreshing and light.
In case you don't know, panna cotta is a firm jelly. It can be either be savory or sweet. Instead of using gelatin, I used agar for the vegetarians in the house. I paired the panna cottas with mixed vegetables and lentils to get a balanced meal with proteins, dairy and veggies.
I served them in little verrines. Verrine is just a fancy word for glasses but they are the latest trend in French cooking. If you host a buffet-style dinner, it's the ideal way to run a stress free party as this dish can be prepared in advance.
