Sweet Peanut Nugget Recipe

If you're an Asian food aficionado and walk your way through the blogosphere, you've probably heard of Bee from RasaMalaysia.com. As we speak, Bee is in Malaysia with her adorable 15-month-old baby boy, visiting relatives, celebrating the Year of the Dragon. Since it's the Asian new year today, Bee is sharing with us her peanut nugget recipe from her cookbook, which has over 80 recipes perfect for the upcoming Lunar New Year. Dishes include classic dumplings and Cantonese dim sum, to classic Chinatown dishes such as egg tarts, Chow Mein, Beef Chow Fun, and American favorites such as Broccoli beef and Kung Pao Chicken. It also has comprehensive chapters about ingredients, techniques, and secret tips Bee learned from master Chinese chefs.

This decadent dessert is adapted from a classic Chinese recipe called “tang bu shuai”. Legend has it that in ancient China, the dessert would be served by the family of a single woman to the potential groom to signify the beginning of a sweet and happy marriage. I am not sure about the truth of this tale, but I am sure you will love this easy recipe that is both addictive and delicious.

Salmon Tortilla Pinwheel Appetizers Recipe

Salmon wasabi pinwheels are super easy to make. I prepared wasabi and dill-flavored cream cheese in advance and stored them in the refrigerator until dinner time. The assembling part is so simple a child could roll them. In fact, that’s exactly what we did. I let the kids prepare the rolls and then slice them into bite-sized pieces. We secured the cute appetizers with fancy hors d'oeuvre picks.

For those who can tolerate a little bit of heat, I topped the appetizers with wasabi flavored peanuts to repeat the same flavors from the filling. My husband Lulu brought them back from a recent trip to Texas. Lulu knows what a foodie I am so he always tries to find new products for me to experiment with. It’s not all that altruistic though, since he’s usually the beneficiary of these creations. Don’t I have the sweetest husband?

Vietnamese Peanut Hoisin Dipping Sauce Recipe (Tuong Goi Cuon) Recipe

We brought summer rolls this weekend for a barbecue potluck. Traditionally, the rolls are served with a sauce made from liver but as a child, I always had an aversion to it. So I made tương gỏi cuốn (which literally translates to "sauce for salad rolls" in Vietnamese) with ingredients that would be appealing to a Western palate.

The condiment is a blend of peanut butter, hoisin sauce, ginger garlic paste, đậu (lentils), coconut water and a few ingredients that balance the sweet and sour taste. For more crunch, the summer rolls are first dipped in chopped peanuts.

Whether you serve this sauce with summer shrimp rolls or veggie spring rolls, it will knock your socks off!

South Indian Spicy Nut and Puffed Rice Snack (Chudwa) Recipe

Chudwa, sometimes called chevda, is for South Indians what trail-mix is for us. It's a blend of nuts, dried fruit, puffed rice and various typical Indian spices.

It's very easy to make, but like eggrolls, it's time-consuming. It's a big production. One of my sisters-in-law is in charge of assembling the ingredients. My mother-in-law is the one frying the puffed rice flakes. One other sister's job is to sprinkle the spices as soon as the ingredients are out of the oil. My job is to toss the whole thing and, last but not least, the other 2 younger sisters' job is to taste.  It's a tough job, but somebody has to do it.

Vegetarian Thai Tofu Satay with Peanut Sauce Recipe

In my quest to "share" as many meals as possible with my husband, I always try to make a vegetarian equivalent for him. I've done this successfully several times, like when I made curry tofu pot pie. Today, I created a veggie meal inspired by chicken satay.

The texture is pretty similar to that of the original, and the sauce is just as flavorful. Unseasoned tofu is a very bland ingredient, but it acts as a sponge and absorbs all the strong flavors of the sauce. If you've been scared to try tofu, this is a great place to start.
