Braised Tofu with Hoisin Sauce Recipe

Braised Tofu with Hoisin Sauce

01.27.10 by Jackie

Braising is one of the best cooking methods to increase the flavor of tofu. In this particular dish, I braised the tofu in a hoisin sauce-based mixture for its caramel color and subtle sweetness. To this, I added several vegetables such as wood ear mushrooms, button mushrooms, carrots and Japanese eggplants.

If you've been following my culinary adventures, you know I married a vegetarian. I'm not saying it as though it's a flaw, but I have to admit that when we first got married, I was a little nervous about what I was going to feed my sweetie. I really didn't have any familiarity with vegetarian cuisine. I love Lulu so much that I was determined to learn how to prepare flavorful vegetarian meals. Since then, I've tried boiling tofu, pan-searing it, grilling it, braising it and deep-frying it. I think I've gone through every possibility, but If you have any other methods you like for cooking tofu, please drop me a message.

Vegetarian Quinoa and Eggplant Caviar Recipe

"Chose promise, chose due!" This is a French expression that translates as promises are made to be kept.

As promised, this is the recipe of the vegetarian equivalent of fish caviar that I served my "vegetarian" dinner guests last night. I paired it with mini-crumpets and a little dollop of crème fraîche in between.

This recipe was inspired by the Tassajara Cookbook by Karla Oliveira, which is an excellent resource for vegetarian party food recipes. The quinoa grains and eggplant seeds resemble the original fish eggs. It is basically eggplant caviar, very similar to baba ganoush, mixed with cooked quinoa.

For more flavor, I topped it with an Asian-style mint and cilantro sauce that added a beautiful, bright green color.

Vegetarian Orzo Pasta Salad Recipe

Vegetarian Orzo Pasta Salad

05.25.09 by Jackie

Orzo is a rice shaped pasta that is very convenient for making salads. Just dice all the vegetables the same size as the orzo grains, add a vinaigrette, and you're all set. If you need meat in your meal, diced smoked turkey is a healthy and tasty option.

The reason I made this is that Lulu's family organized a fun picnic for Memorial weekend in Big Basin. It was a pot luck, and I volunteered to make the veggie dish. The orzo pasta salad is easy to make and easy to transport, which are both important considerations when you're planning a picnic. Just drizzle the vinaigrette when you're ready to eat.  Make it for your next family picnic or barbecue; it's guaranteed to be a hit!

Sara's Baigan Bharta (Indian Mashed Eggplant Dip) Recipe

Baigan Bharta is very similar to the Middle Eastern dish called baba ganoush. I discovered the Indian version after I got married. Lulu's aunt, Sara, makes it whenever we come over for dinner and I absolutely love it. It's very fresh and full of Indian spices. She adds yogurt at the end, and I think it gives the dish a velvety creaminess and adds another dimension of flavor to the eggplant.

One of the best characteristics of Baigan Bharta is its versatility. It is perfect as an appetizer served with baked pita bread. I also like to use it as a spread when I make vegetarian sandwiches. It even makes the perfect element for a fusion dish. I like to serve it as a first course with Israeli couscous. The creamy flavor of the Baigan Bharta melds very well with the tangy vinaigrette that I pour over the couscous.

Roules d'Aubergines au Chevre (Goat Cheese Eggplant Rollups) Recipe

I had half a tray of ice cubes left of my pistachio pesto and 2 beautiful eggplants. We had a very nice sunny day today in Northern California. I wanted to make something light and fresh. The roulés d'aubergines au chèvre are a good starter course.
