Roasted Beet Salad with Feta and Candied Pecans Recipe

Roasted beet salad is a first course I serve often when we host dinner parties. It has great visual appeal. The dish doesn’t just have good looks though. The roasted beets are incredibly flavorful and they pair wonderfully with many ingredients. I've used them in risotto, gnocchi pasta and salad. To give the beet salad a rich mouth-feel, I added garlic-and-herb-flavored feta cheese and spicy candied pecans (I recently used them as garnish for pumpkin mousse) for crunch.

If you're planning a buffet-style dinner, you could serve the beet salad in endive or mini butter lettuce leaves as a "cup". Just spoon the mixture onto the leaves and chill for an hour before serving. When you're ready to serve, drizzle with the vinaigrette. Voilà!

Fingerling Potato Salad Recipe

Fingerling potato salad is a very easy one-course lunch meal I throw together when I’m in a hurry. To make the dish, fingerling potatoes are steamed until softened. These would be great on their own, but to make it a complete meal I added crunchy Romaine lettuce, sliced celery and Persian cucumbers.

The vegetable salad is then mixed in a yogurt vinaigrette dressing, which remains very healthy without sacrificing flavor. I also added a few slices of smoked salmon on the side. The dish is light, but it still keeps me energized until dinner time. I could eat this salad every day.

Fruit Chaat Recipe (Indian Spicy Fruit Salad) Recipe

Contrary to what one would think, fruit chaat is not your average fruit salad, and it's not served as a dessert. It's a savory snack. Several types of fruits are chopped up and mixed together, then seasoned with Indian spices such as chili powder, ground cumin and salt. For fruit chaat, bananas and oranges are a must; today I also added apples, grapes, apricots and mangoes, but you could combine any other fruits that are in season.

The first time I tasted it, my brain was expecting sweet flavors but my palate kept getting a savory signal. The subtle spiciness and tanginess with hints of cumin makes the dish very tasty. Next time you have a dinner party, this dish could make a perfect, and addition to your menu.

Indian Salsa: Kachumber Recipe (Chop Chop Salad) Recipe

Indian meals are typically composed of a starch such as basmati rice or flat breads (naan, roti, paratha), a meat dish (or fish), a lentil dish such as kali dal,  crudité-style vegetables such as horseradish and cucumbers, raita, and of course kachumber.

So, you ask, what is kachumber? Kachumber, also spelled cachumbar or kachumbar, is often referred to as "chop chop salad". It's a blend of onions, chiles and raw vegetables with lemon juice and other spices. It looks very similar to regular salsa but with a lot more onions and a lot more heat. For regular salsa, there’s usually a tomato base, whereas in the Indian version, onion and lemon form the base of the flavor. It’s wonderfully refreshing, and really cuts through the heaviness of Indian dishes.

Grilled Vegetable Summer Pasta Salad Recipe Recipe

After the pool party we recently hosted, we had lots of leftover grilled vegetables. Pasta salads are a great way to make use of leftover veggies, so today I prepared some for the family. It was really easy; all I needed to do was boil some pasta and add some salad dressing to it.

This time around I made a spicy salad dressing that I drizzled over fusilli pasta, roasted bell peppers, grilled eggplant, grilled Portobello mushrooms and sun-dried tomatoes. This meal met everyone's diet, except for my father-in-law who's allergic to mushrooms (no meat, not nuts, no eggs), so I placed the grilled mushrooms on the side.
