Banana Almond Butterscotch Cookies Recipe

Butterscotch, freeze-dried banana chips and sliced almonds may not be the first ingredients to come to mind when making cookies, but they work incredibly well together. The crunch of the almonds and bananas is a great foil to the soft and creamy butterscotch chips. To reinforce the flavors, I added banana extract to the brown sugar cookie dough. The cookies taste fantastic, right out of the oven.

If you have a little extra time on your hands, make an extra batch so you can freeze the cookie dough for later use. We had some surprise company for tea this weekend, so I needed to whip up a plate of cookies. I just pulled out a log from the freezer, cut it into discs and popped them in the oven. They taste so much better than store-bought cookies, and when you pull them out of the oven, ooey gooey and piping hot, you'll look like an absolute rockstar!

Baked Artichokes with Persillade Crust Recipe

Baked artichokes with persillade crust is a great appetizer. It's light, healthy and flavorful. First, the artichokes are boiled, then covered with a lemon parsley bread mixture and roasted in the oven until golden brown.

I made the persillade crust using stale brioche. It gives the crust a subtle sweetness. I also added a little brown sugar and honey Dijon mustard to reinforce the sweetness, as well as to balance the distinct, slightly bitter taste of artichoke. Lemon and parsley tie all the flavors together. I served the breaded artichokes with a bowl of homemade blue-cheese ranch salad dressing on the side. It's a delicious way to welcome the arrival of Spring!

Chicken kebabs are both healthy and nutritious. The poultry is mixed with garbanzo beans and seasoned with Indian spices. I usually make this recipe when I have leftover chicken. We had company for dinner so I decided to make a complete meal out of them and serve them as burgers. I double-stacked 2 patties with tomato slices, cilantro, fresh mint, raita (Indian yogurt sauce), red onion and fried shallots.

The weather is getting clearer and sunnier by the day, so next time you think of a barbecue, you should consider making chicken shami kebabs (that's the real name of the dish). If you're planning a fancy dinner party, you could serve them as tapas. Bite-size burgers are getting very popular. Either way, you should definitely try this fresh take on an American classic.

Green Jackfruit with Tofu

Mít & tàu hũ kho tương is a fairly common vegetarian dish in the Buddhist community. Mít ("jackfruit" in Vietnamese) is picked when it's still green. First, the young fruit is boiled to soften it. Then it's braised in soy sauce and used as a vegetable to accompany tofu. Like tofu, unseasoned green jackfruit is fairly bland but acts as a sponge and absorbs the flavors of the sauce.

The cooking procedure helps to give the jackfruit a soft texture that resembles the pork fat in thịt kho (braised meat), and the stringy texture of the jackfruit simulates the stringy texture of the meat. The result is quite pleasant and surprising. Next time you're in an Asian market, look for fresh young jackfruit; it's delicious!
