French Madeleines

If there is one thing I miss about France the most, its stopping by the local bakery in the morning.  The sites and smells are intoxicating, but I didn't really appreciate them until I moved to the US.  You know the saying - you don't know what you have until it's gone...

These madeleines are my attempt at recreating those memories.  When made correctly, madeleines are delicate and fluffy with a gentle sweetness that doesn't overpower the other flavors in the cookie.  As you can see from the pictures, my madeleines have a bump in the middle.  Most of the madeleines I've seen sold in the US are more tapered and flat, and as a result they are dense and unappealing.

I couldn't name my site PhamFatale.com if I didn't conduct some espionage from time to time.  I found out the secret for making light, airy madeleines with the characteristic bump through a contact of mine that is friends with one the most famous patissiers (bakers) in Paris.  I can't say his name because I'll blow the cover of my contact, but read on to learn his secrets.

If you've been following my blog, you'll know that I've been experimenting with agave syrup a lot lately. Agave is a versatile sweetener that can be used to liven up both desserts and savory dishes. It has a flavor that is a cross between honey and caramel. Since it's a syrup, it's perfect for springtime drinks because it will dissolve in cold liquids. Agave is also used for another kind of beverage - it's the sugar that is fermented into tequila.

Soy Bacon Parmesan Puff Pastry Knots Recipe

Puff pastry knots is the easiest and fastest way to get some appetizers ready right before dinner. I usually make these appetizers whenever I have leftover puff pastry dough. Nothing goes to waste!

I made cheese twists a few months ago and wanted to try out some new flavors. Half of the crowd at my home is vegetarian so I gathered some of my meatless pantry staples like soy bacon bits and horseradish mustard to please everyone.

Blueberry Maple Oatmeal Smoothie Recipe

Oatmeal Smoothies are the fastest way for me to give my husband Lulu a well balanced breakfast. It's also perfect for him when he's on the go. I already made an Oatmeal Vanilla Almond Protein Shake last week so I decided to change the flavor this week. I had blueberry preserves left in my pantry that I made last summer from the berries from our garden. Unfortunately, my blueberry bush hasn't produced any fruit yet, so I ran to my local market and got some fresh blueberries.

The smoothie turned out velvety and creamy, yet still very healthy. You can add your own twist to it by using different fruits and flavors (tropical fruits, berries, different syrups). Be creative.

It's always a great feeling to make something for the ones you love that they can appreciate.  I think that's why I love to cook. This is a perfect recipe to express your affection when you're pressed for time!

Lima Beans Paneer and Saffron Basmati Rice (Vegetarian Biryani) Recipe

Vegetarian biryani is a vegetable curry with saffron basmati rice. This dish is truly authentic Indian cuisine. I always make Biryani when we have a big crowd at home. Indian food is meant to be eaten by a big group.

Paneer is an Indian cheese that you commonly fry and add to rice or vegetables. It is pretty firm and does not melt when heated. The kids love vegetarian biryani and the saffron color brings a nice ...The same dish, when prepared with meat (usually mutton, goat or chicken), is traditional wedding fare.  One of Lulu's uncles told me that if he goes to a large Indian function and doesn't get biryani he feels cheated.
