I hope it's not going to be too cold next Thursday for our family gathering. But I'm keeping this soup recipe as a “maybe” in case the temperature drops too much and we crave something soothing and warm. 

To ensure the soup keeps up the Thanksgiving theme, I used a combination of fall-friendly veggies like pumpkin and roasted cauliflower. I also added duck prosciutto for texture and thyme-infused whipped cream for extra creaminess.

Kale Thanksgiving Bread Stuffing Recipe Recipe

Our Thanksgiving table would be incomplete without vegetarian bread stuffing / dressing. I usually serve it as a side dish so it's a great accompaniment to meat and a main course for the vegetarians in my home. 

For this version, I was inspired by green ingredients such as asparagus, zucchini, celery, artichoke, kale, Castelvetrano green olives and Havarti cheese with dill. I used olive bread, a small white onion and homemade vegetable broth I prepared in advance and stored in the freezer for the upcoming holiday. Give this "green" and healthy recipe a try; it might bring a new kick to your Thanksgiving menu.

Pumpkin Marshmallow Butterscotch Oatmeal Bars Recipe

These sinfully scrumptious pumpkin marshmallow butterscotch oatmeal bars may be beautiful to look at and a bit messy to eat, but they were a huge hit at our house. First, I prepared a chewy oatmeal-brown sugar crust for both the base and the topping. For the filling, I selected Thanksgiving-related items such as pumpkin purée, oozy marshmallows, decadent butterscotch chips and chocolate chips.

This sweet treat is definitely going to be part of our Thanksgiving menu. When I asked for the family's feedback, all I heard was "more". You might also want to prepare a batch for the morning following Thanksgiving; these winning bars would be a perfect brunch contribution as well.

Roasted Butternut Squash Orzo Recipe Recipe

This orzo pasta dish can either appeal to a vegetarian as a main course or to others as an accompaniment for the meat or fish course of the meal. And the ingredients make it perfect for Thanksgiving.

To make the dish, I simply roasted a butternut squash, mixed in cooked orzo pasta and added a wide range of vegetables such as carrots, sun-dried tomatoes, artichoke hearts and string beans, as well as pan-fried tofu cubes for extra protein and dried cranberries to bring home the autumn-theme of the meal.

This sweet and tart side dish can easily be prepared in advance. All you have to keep in mind is to cut all the ingredients the same size for a homogeneous texture. I also tried selecting various colors to make the dish look appealing.

Cranberry Chicken Recipe

I usually use lemon juice as a meat tenderizer; the acidity from the citrus is perfect for softening meat and getting it extra tender. For Thanksgiving, I wanted to try something different, so I tested a new chicken recipe by substituting cranberry juice for the lemon juice. I wanted to make sure the skin was nice and crispy, so I pan-fried the chicken first, then completed cooking in the oven.  

I still don't have a final count on the number of meat eaters attending our Thanksgiving. I know for sure we'll have many vegetarian side dishes and appetizers to please my husband Lulu, Daddy and the girls, but I'm still wondering if I'll roast an entire turkey or two chickens. This recipe will work for either bird, so I’m covered either way. And so are you!
