Butternut Squash Lasagna Recipe

Lasagna is one of the ultimate comfort foods our family enjoys. It's butternut squash season, so I've been cooking with it a lot lately, and I thought it would be fun to use it in a lasagna dish.

To start, I roasted butternut squash pieces in the oven with herbs and honey, then blended it into a smooth purée. I then stacked layers of pasta sheets in between creamy, cheesy white sauce and butternut squash purée. It’s a perfect combination of sweet and savory, and it really enhances the natural sweetness of the ricotta.

The lasagna dish can be prepared in advance (the day before) and kept it in the refrigerator overnight. It might not be the healthiest but it will definitely satisfy your appetite on cold days.

Mattar Tofu Paneer (Indian Tofu Recipe) Recipe

Mattar paneer is a dish made with peas and Indian cheese. This time, I decided to make the same flavorful dish, but with fewer calories. To accomplish this, I substituted firm tofu in place of traditional paneer cheese.

I fried cubes of tofu the same way as I would paneer, then simmered them in a delectable, creamy onion and tomato curry sauce with green peas. If you’re looking to make a foray into veganism, this is the perfect way to start (see tips).

Of course, if - like my father-in-law - you feel cheated by the absence of golden chunks of fried cheese, you can always try the traditional mattar paneer recipe. I won’t tell!

Pumpkin Protein Drink Recipe

I think if he could, my husband would drink pumpkin pie. He already inhales it every Thanksgiving! So this pumpkin protein drink is about as close as it gets to making his dreams come true. It's an ultra easy breakfast to make when you're on the go, and it’ll get you in the mood for the soon-to-be holiday season.

The drink is packed with vitamins, protein (I added soy protein) and calcium, making it markedly healthier than the real deal, and perfect for vegetarians like my husband Lulu.

Mini Keema Burgers in Pate a Choux Buns Recipe

What happens when you combine a classic American dish with recipes from France and India? The correct answer is mini pâte à choux keema burgers. These are definitely out of the ordinary, but they are fun and taste great.

Using choux paste, I made standard cream puff shells which I used as the hamburger buns. I filled them with Indian-style, spicy ground beef mixed with diced potatoes, called "keema". To reinforce the idea that this dish is supposed to be a burger, I added a slice of Gruyère and lettuce.

I was very pleased with the presentation; it really looked like an upscale hamburger. The flavors were fabulously sharp and spicy. These special treats will take you around the world with every single bite.

Cumin Coriander Orzo Pasta Recipe Recipe

Orzo is rice-shaped pasta. If you have little children, this dish is always a hit. I mixed several vegetables such as Japanese eggplant, roasted pumpkin and green beans, and flavored the dish with cumin and coriander. The spices take the stage in this pasta dish and impart a wonderful Asian flair.

I wanted to incorporate some protein into the dish, so I also added garbanzo beans. They're an excellent source of protein for the vegetarians in my house. For the meat eaters in the house, I typically serve the orzo with roast chicken or a cordon bleu.
