Fumet de Poisson (Fish Stock Recipe) Recipe

Since I arrived at my parents' in Paris, I’ve been preparing Vietnamese dishes they haven’t had since they left Saigon in the mid ‘70s. In the Bay Area where I live, all kinds of ethnic ingredients are widely available, so I brought some and made the best bỏ nhúng dấm (Vietnamese-style beef fondue) and used the shells for this fumet.  

A fumet de poisson is a flavorful fish stock made with seafood remnants. I used écrevisse (small French lobster, similar to a crayfish) shells, empty clam shells and a whole fish. I also added a few whole chiles, carrots, leeks, celery leaves, garlic and tomatoes for extra natural sweetness. The fumet is incredibly versatile, and can be used in soups and sauces that accompany just about any seafood. I especially like to use this in my lobster bisque. Enjoy!

Roasted Pumpkin Filled Crepe Recipe (Beggar's Purse) Recipe

For my husband Lulu's birthday, the three of us took a few days off to visit Paris. My baby Aria is already having a blast, enjoying every bit of Parisian life so far. We arrived last Friday and have already had time to go to museums and wander through Parisian markets. We noticed that Halloween has become increasingly popular in France, and decorated pumpkins are available everywhere. Of course, pumpkins are just as much fun to eat as they are to draw on, so I picked one up and used it to make dinner.

To prepare this recipe I roasted a pumpkin, gathered the pulp and stuffed it into a crêpe. The filling also contains a little Saint Marcellin cheese and pine nuts. I love cooking with this ripe cheese; when warm, it has a robust mushroom-y, earthy flavor.

Carrot Chocolate Pudding Recipe

Today, I felt an urge to make chocolate pudding. By itself it can be a bit boring, so I spiced it up with cardamom and carrots. The idea is to obtain a gooey melted center with crackly edges. I love the contrast of hot and cold, so I paired the baked dessert with Indian cardamom ice cream I bought at a local Indian store.

I made the dessert in individual ramekins, which can help with portion control (assuming you stop at just one). This dessert might be a little high in calories, but what’s life without a little decadence? You won't be able to resist!

Creamy Pesto Polenta Recipe

In this recipe I brightened a creamy polenta dish with homemade pesto. The pesto is made with parsley, pine nuts and roasted garlic. To ensure fluffy polenta, I incorporated whipped cream. The result is spectacular, almost dessert-like.

This delicious side dish pairs wonderfully with beef steaks. I’ve also served it with a red cabbage coleslaw so the colors pop on the plate. You know the saying: you eat with your eyes first!

Wild Rice and Hearts of Palm Salad Recipe Recipe

After making the hearts of palm crostini, my husband Lulu asked for more. I decided to make a healthier hearts of palm dish this time. I served the veggie in a wild rice salad with refreshing greens such as sugar snap peas, celery and flat-leaf parsley. A little sprinkling of sunflower seeds for crunch and crumbled blue cheese for a richer mouth feel completed the dish.

If cooked improperly, wild rice can be very tough and taste like horse food. Follow the few steps I've outlined, and you'll get soft, delicate rice with a nutty flavor.
