I love duck breast; I find it so juicy and flavorful. Recently, I prepared roasted duck molé and in my opinion, unsweetened dark chocolate was what made the dish. First, I pan-seared the duck, skin side down, and then finished roasting it in the oven. Using the same griddle from the duck, I prepared the sauce with a hint of spiciness.

The molé sauce provides a richly complex flavor to the meat with the seductive addition of chocolate. Chocolate doesn't only satisfy foodies with a sweet tooth; this molé sauce is a great example of a savory application for chocolate.

This year, with little Aria attending preschool, the ideas about love have drastically changed and are far from the stuff of romantic comedies. I was talking about it with a girlfriend who has toddlers too. She was telling me that after having a 3-year-old and 4 month old, her husband agreed to get a toaster oven and she would get a vacuum for their Valentine's Day gifts. And now our preparations for Valentine's Day consist of DIY kids' arts and crafts and a lot of baking for Aria's friends. I prepared chocolate-frosted sweet treats this morning.

These are just the right size for little fingers to enjoy, but you can of course make them bigger if they're for your own Valentine's celebration. The chocolate isn't cloyingly sweet, which means you can enjoy more than one!

Chocolate Orange King Cake (Galette des Rois)

La galette des Rois, or king's cake, is made every year to celebrate Epiphany. For those who don't know, epiphany is a Christian holiday that celebrates the Magi visiting baby Jesus. January 6th is the official day of Epiphany, but in France, we usually celebrate it on the Sunday between the 2nd and the 8th.  

This delicious treat is a flaky puff pastry with a sweet filling. The traditional filling is a simple almond cream, or frangipane, but this year I felt like a change. To the basic frangipane recipe I added melted chocolate and Grand Marnier (or orange extract for the kids).

Before serving, it's customary to hide a small figurine in the galette. Whoever gets the piece with the figurine is king (or queen) for a day. In reality, the winner is anyone who gets to have a slice of this delicious dessert.

Chocolate Snowflake Crinkle Cookies

If you have a toddler at home, odds are you have heard about Disney’s musical Frozen and all of the fun characters featured in the film. I made the mistake of purchasing the DVD so we watch it all the time. Our little Aria identifies herself as Princess Anna and we got a little Frozen-themed apron for her to help me out in the kitchen. 

Aria has been determined to prepare a snowflake sweet treat so I doubled her pleasure by baking crinkle cookies using chocolate. The fudge-like cookies are covered in powdered sugar with a beautifully crinkled top once baked. Making the cookie batter isn't complicated but the hardest part was to teach my little one patience, as it's best chilled overnight before slipping into the oven.
