With a home full of vegetarians, I always challenge myself to develop new meals that fit our family's diet. Mushrooms are a great flavor and texture substitute for meat. If, like me and little Aria, you're not a vegetarian, cooking with mushrooms will help you creaete new vegetarian dishes that are as satisfying as meat.  

Morels, chanterelles (girolles in French), beech, maitake, Hegehogs, porcini, wood ear (also known as black fungus mushrooms or nấm mèo in Vietnamese), brown crimini , shiitake and Portobello mushrooms are all varieties  I've used often in the kitchen. They're rich in umami, which is the savory flavor quality that sort of mimics what we get from meat. Happy cooking!

Is there anything that screams  comfort food more than a dish of gratin? I prepared a morel mushroom stuffed eggplant gratin. Every so often, our family craves a rich, decadent, gooey and cheesy meal.

First I sliced the eggplant, then pan-fried the slices. The mixture was flavored with earthy mushrooms that pair wonderfully with the meaty texture of the eggplant and luscious, creamy ricotta cheese. To save time, you can prepare the elements of the dish in advance and assemble 00000at the last minute; I promise your hard work will definitely be rewarded!

Wild Mushroom Tartlet Recipe

I recently hosted a dinner party and was looking for a gourmet side dish for filet mignon. I selected a savory tart filled with a combination of wild mushrooms such as fresh morels, beech, maitake, Hegehogs and brown crimini mushrooms. 

Playing with such ingredients is a great way to take your guests on a great gastronomical adventure. Plus, preparing this dish is fairly basic and simple. I used  pastry dough that I baked first and then filled with the mushrooms. They're rich in umami, which is the savory flavor quality that sort of mimics what we get from meat. The savory tarts ended up being the perfect pairing for the gourmet meat.

Yuba Stuffed Mushroom Appetizers

Whenever I'm at the Asian grocery store, I buy large quantities of fresh yuba (tofu skin) whenever it's available. If you've wanted to try a vegetarian meat substitute but were suspicious it would taste bland, I urge you to try these yuba stuffed mushroom appetizers. 

If you're not familiar with yuba (tàu hũ ky in Vietnamese), this food product is the film that's formed on the surface after boiling the soy beans in water. I bought ready-to-use fresh yuba, so all I needed to do was season it. I made a mixture of rice vinegar, brown sugar, cornstarch, garlic, ginger, tahini, yuba, five-spice powder and black sesame seeds. 

The assembly was very easy. I stuffed the yuba filling into hollowed crimini mushrooms and garnished the appetizers with sunflower seeds for extra crunch. Voilà!

Gourmet Mushroom Risotto Recipe

I feel super lucky to live in the Bay Area; there's such an abundance of incredible ingredients. The wide range of gourmet mushrooms available at my local market, The Milk Pail of Mountain View, makes me giddy. 

The possibilities when presented with such fine ingredients are nearly endless.  I could have prepared a simple, flavorful omelet, but I decided to go for a more delicate dish: vegetarian risotto.

To do so, I used whatever the Milk Pail carried on that particular day (I didn't select everything because  the prices of some of the mushrooms gave me the chills). In the end, I included fresh morels, maitake mushrooms, Hegehogs and brown crimini mushrooms. I loved how this gastronomical adventure was able to please and feed my loved ones!
