Vegetarian Yam Pie Recipe

I was inspired by the holiday season to make this savory pie. I made my own yam-flavored pie crust and filled it with French green lentils, red onions, crème fraîche and yams and topped it with smoked Cheddar cheese.

To ensure the yams were fully cooked, I twice-baked them. This all-the-way yam pie could be a great highlight to your holiday table.

If you were born in the 80s and lived in France, you probably know of the marble cake called Le Savane de Papy Brossard. Ça a bercé mon enfance, which I'd translate to "it sweetened my childhood". This coffee cake is a marbré cake. The beauty of this cake is its appealing look once sliced with its gorgeously marbled, streaked appearance made of vanilla and chocolate.

A generous amount of quality butter and a little milk made the cake moist and fluffy while milk chocolate provided the contrast in color needed for this sweet treat. I think the result was very close to the one I had when I was a child. My hope is that baby Aria will keep the same fond memories of this chocolate marble cake once she grows up!

Bell Pepper Stuffed Chicken Rolls

This is my second most favorite chicken recipe (after my poulet rôti, "roasted chicken"). The whole idea is to use dark meat from the chicken thigh, stuff it, pan-sear the meat and finish cooking in the oven. It's as simple as that. First, I used boneless chicken (de-boning the thigh and using the bones for excellent chicken broth) and made sure the skin was still on. Then I proceeded with the tender meat. I used a preserved lemon marinade and let it rest overnight. For the filling, I combined roasted red bell peppers, Manzanilla olives, shallots and cornichons (French gherkins). 

To me, cooking is an expression of love. The dish doesn't have to be complicated. Learn your basics and you'll be able to dazzle your friends and family with creative, over-the-top dishes by making a few variants of your favorite recipes.
