Mushroom Potato Galette Recipe

Sometimes the simplest things make the most delicious dish. For this vegetarian recipe, I only used 3 ingredients plus seasonings and tried to showcase them in one easy dish. Red potatoes from my garden, button mushrooms and ghee (clarified butter). Very thinly sliced potatoes were arranged into a galette and stuffed with mushrooms. That's all. I also flavored the ghee with oregano and seasoned the potatoes with salt and white pepper.

It's amazing how easy it is to grow potatoes: bury the potatoes into the soil 3 weeks before the last "frost" date. For the Bay Area, I usually wait until late March. Remember to water regularly. You'll be able to harvest the first potatoes when the flowers open up. Check back often; the main part of the plants should be pulled once the foliage has died.

Oeuf Mollet (Soft-Boiled Egg Recipe)

After more than 10 years of knowing each other, my husband Lulu still reminds me how much I enjoy his sense of humor even though I often don't want to admit it. Yesterday, he came to me and said from now on, after much thought, he has decided to incorporate animal protein into his vegetarian diet. I got really excited, and naively, I prepared oeufs mollets (French for soft-boiled eggs) for him. It took exactly six minutes to prepare. Lulu looked at the eggs and said: "Nah. April Fools!"

It wasn't a big deal because Aria and I ended up eating the eggs. They were delicious, especially because they were freshly laid. The preparation is very easy. Start by quickly boiling the eggs, then peel and serve them on a bed of béchamel-topped spinach and asparagus.

I'll post another preparation that's as simple as oeufs mollets, where the eggs are boiled for an even shorter amount of time. They're called "oeufs à la coque".

Sweet Potato Pancake Recipe

When I was working on my first cookbook, Haute Potato, I went through a list of all the basic potato recipes I've made throughout the years. There's one in particular I really like but it received a thumbs down from my mostly vegetarian taste-testers, also known as my husband Lulu and his sisters. 

The meat eaters loved the sweet potato pancakes, but the vegetarians thought they were too eggy. For the book I decided to go with the recipes that enjoyed more uniform support, so here's the recipe. And for all the herbivores out there, I haven't tested it with an egg substitute such as lecithin yet, but I will definitely do so in the near future. 

The recipe is ultra-easy. I paired the sweet potato pancakes with veal scallopini and "fines-herbes" flavored cream cheese and pineapple relish on the side. I often make these sweet potato pancakes for Thanksgiving and serve them with poultry. With a couple of big holidays around the corner, this is a recipe to keep in mind.

The preparation of this visually striking potato dish is fairly easy if you own a mandoline. Very-thinly-sliced potatoes are parboiled, then brushed with a butter and oil mixture. The slices are then stacked in individual ramekins to mimic flower petals.

It’s an elegant and innovative way to have potatoes as a part of your Thanksgiving table. With my first cookbook on shelves very soon (it's due out on December 18th), I'm going to be posting a lot of potato dishes that didn't make into to the book. Sinh To Mit Recipe (Vietnamese Jackfruit Smoothie)

Sinh tố  trái cây are popular Vietnamese snack drinks. The phrase literally translates to "fruit vitamins", but you know them better as smoothies.

This particular smoothie is flavored with jackfruit (mít in Vietnamese). The secret ingredient though is the mung beans (đậu xanh), which provide a creamy and consistent texture. The fresh ripe fruit gives a natural sweetness to the smoothie, which is enhanced by the addition of condensed milk and ice cream.
