Mash Ki Daal (Spiced Pearled Barley Recipe) Recipe

Mash Ki Daal (Spiced Pearled Barley Recipe)

01.09.14 by Jackie

This is my interpretation of mash ki dal, which is traditionally a lentil dish made from tikki dal. For this version, I prepared it with pearled barley, which I think has a marvelous texture that works well for the dish. I soaked the barley overnight so the grains were fully hydrated.

The rest of the preparation consists of a few coarsely chopped tomatoes, dried red chiles, thinly sliced ginger and chopped coriander. It's nutritious, tasty and not that complicated. Perfect for our family's dinner meal!

I'll be in Los Angeles this weekend sharing samples from my latest cookbook, Banh Mi, at a pre-party for the Golden Globes. Stay tuned for pictures!

Salted Caramel Milk Chocolate Chip Cookie Recipe Recipe

Salted Caramel Milk Chocolate Chip Cookie Recipe

12.30.13 by Jackie

I haven't been active for the past week on PhamFatale.com. We've spent a crazy holiday season, baking a ton! Here's one of the many chocolate chip cookie versions we made during the week. We used chocolate we received over Christmas, so these feature M&Ms and chunks of coarsely chopped Godiva salted caramel milk chocolate bars.

The secret to perfect texture for this timeless classic is to closely watch the baking time. Don't over-bake them but also don't under-cook them or you'll end up with just cookie dough! Happy baking!

Poha Chudva Recipe Recipe

Poha Chudva Recipe

12.12.13 by Jackie

I realize I haven't posted any Indian dishes for a while. Last weekend, Daddy, my father-in-law, suggested we prepare poha, which is a flattened rice dish. Poha is a great breakfast item and is also delightful as a snack. I've prepared similar dishes such as chudva in the past.

Thick, flattened rice grains are rehydrated and cooked with turmeric and coconut. I kept the recipe fairly simple , flavoring the rice with only mustard seeds, cumin seeds, dried red chiles, curry leaves, cilantro and a generous amount of lime juice.

You could fancy this up and make it more filling with frozen green peas, diced potatoes or cashew nuts. I haven't seen this rice dish in any Indian restaurant, so if you want a fairly unique culinary trip to India, give this simple and easy dish a try!

Pumpkin Waffles: Thanksgiving-themed Breakfast Recipe Recipe

Pumpkin Waffles: Thanksgiving-themed Breakfast Recipe

11.06.13 by Jackie

Waffles are always a hit at breakfast. And dressing them up with pumpkin is a wonderful way to celebrate Thanksgiving. I prepared my usual waffle batter, but this time, I added pumpkin purée, molasses and freshly grated cinnamon and nutmeg. I prepared several batches for tomorrow morning; it will be a great way for the family to start off the day.

In my opinion, a good dusting of powdered sugar and a nice hot cup of chai are all you need to enjoy these waffles. But I've reserved a little surprise for the family: I'll serve the waffles with candied pecans, whipped butter and hot syrup.

Basil Cucumber Water Recipe Recipe

Basil Cucumber Water Recipe

09.24.13 by Jackie

My husband Lulu and I recently stayed in a very nice hotel that served cucumber water. The drink was so refreshing I recreated it as soon as I came home. I added a few twists with chia seeds and some basil leaves.

The beauty is that you can prepare a lot of flavored water in advance of any type of party. You can use the combination of herbs, citrus, seeds and even berries you prefer. I’ve had a berry water with raspberries and blueberries that was absolutely wonderful. It’s so easy to make, you have no excuse for buying flavored water that’s probably filled with indescribable preservatives and additives.
