Chestnut Baklava Recipe (+Giveaway) Recipe

Chestnut Baklava Recipe (+Giveaway)

12.16.11 by Jackie

Have you ever had trouble serving baklava? It gets sticky, messy and difficult to handle. I found a solution by using shredded phyllo dough instead of sheets of phyllo dough and baking it in individual molds. They tend to trap the syrupy goodness in their web instead of getting soaked and sticky. Since it's the holidays, I wanted to add the flavor of Christmas to the baklava, so I added chestnuts. I layered both chestnut purée and roasted chestnuts into the baklava, along with crushed pistachios for color and flavor. I also substituted date syrup for honey, which added a depth of flavor and a strong contrast of color.

If you're looking for a dessert recipe for the holidays that's easy to make but looks elegant, consider baklava. It's an easy, stress-free dessert that is sure to please everyone.

I used pure, organic date syrup from Organics Are For Everyone. If you've never tried date syrup before, you're in for a treat. You can use it in place of just about any syrup. Date syrup has a mild tanginess to it that balances the sweetness. I especially like it on waffles, pancakes and French toast. For a chance to win two jars of date syrup from Organics Are For Everyone, enter today's 25 Days of Giveaways contest. And if you're interested in making this recipe today, you can get a 20% discount from Organics Are For Everyone by using the "FATALE" promo code (good till 12/21).

Marshmallow Popcorn Treat Yogurt Parfait Recipe (+ Giveaway) Recipe

Marshmallow Popcorn Treat Yogurt Parfait Recipe (+ Giveaway)

12.07.11 by Jackie

479° Popcorn is my favorite snack of the moment. The packaging is fun and creative and needless to say this gourmet organic popcorn is awesome. I could finish an entire bag on my own. 479° Popcorn is a San Francisco company that features a very interesting array of flavors such as Fleur de Sel Caramel, Alderwood Smoked Sea Salt, Black Truffle, Chipotle Caramel + Almonds, Ginger Sesame Caramel, Madras Curry Coconut + Cashews, Pimenton de la Vera and Vietnamese Cinnamon Sugar. The design is so original it makes the perfect holiday gift box. One of my husband's little sisters is obsessed with popcorn, and her birthday is coming up in a few weeks, so we're planning on buying her weight in 479° popcorn as a present. OK, that's a bit of an exaggeration!

I love experimenting with just about anything, so I created marshmallow treats with their Vietnamese Cinnamon Sugar-flavored popcorn. I made a yogurt parfait and incorporated the sweet treats as a substitute for granola. This recipe is flavored according to the season; I used mandarin wedges and orange and cranberry sauce. You could adapt it with what you like of course. You don't have to create these cups for breakfast or dessert (or whenever you eat parfaits); just savoring 479° Popcorn by itself is perfectly reasonable.

Goat Cheese and Fig Crostini Recipe Recipe

Goat Cheese and Fig Crostini Recipe

11.09.11 by Jackie

We were lucky enough to be able to pick a lot of figs in our garden this year. We had so many, I made several kinds of fig preserves. One of my favorite ways to use fig preserves is to pair it with goat cheese and it just so happened that I received delicious goat cheese from Cypress Grove Chevre today. I spread the two ingredients on crostini for a nice contrast of texture and flavor. I grilled day-old baguette and smeared a layer of goat cheese. The warmth from the bread let the goat cheese ooze and become creamier. The last layer was the fig preserves. I have to admit this easy appetizer is my favorite snack. I love them and could eat a ton!

I have a little story that might sound silly to you but Cypress Grove Chevre goat cheese is very dear to my heart. I remember when I first got married, my husband Lulu surprised me and took me on the 17-mile drive in Carmel, which I had never seen before. I remember he prepared the most romantic picnic on the beach and fed me wonderful Cypress Grove chevre. I had never heard of the company before that picnic but the cute packaging and beautiful scenery has since made it unforgettable to me. The cheese is rich and creamy and absolutely captures what I love about French chevre. It is one of the few American-made cheeses I’ve had that rival its French counterparts.

Cypress Grove Chevre will be a part of our December giveaways, so be sure to check back for your chance to win. Doesn't that sound awesome?

Che Bap Recipe (Vietnamese Sweet Corn Pudding) Recipe

Che Bap Recipe (Vietnamese Sweet Corn Pudding)

11.04.11 by Jackie

Chè is difficult to describe. It's a sweet, soupy pudding served in a small bowl. As I've mentioned before, Vietnamese desserts are mildly sweet and don't always have the most appealing presentation. Chè definitely fits this description. As a child, Maman used to make it very often, especially for the Buddhist prayer rituals (cúng). This version of chè is made with corn and coconut milk; it's called chè bắp in Vietnamese. It can be eaten warm or cold. This dessert can be made all year round; during the summer, I use fresh corn off the cob. When the weather gets cold, as it has over the past few days, canned corn kernels work just fine.

Chè bắp is generally topped with a thick, syrupy coconut sauce and slightly toasted white sesame seeds. This is probably one of my favorite Asian sweets.
