Tri-Color Green Bean Salad Recipe Recipe

Tri-Color Green Bean Salad Recipe

09.08.14 by Jackie

At this time of the year I think I've reached the last crop of green beans to harvest from our garden. I simply steamed them and served them the healthy way. In addition to regular green beans, I bought fresh purple beans and wax beans to complete the dish.

I seasoned the steamed bean salad with a sauce that I concocted using green beans, sweet basil, almond powder and fruity olive oil. As a reminder of the sauce flavor, I garnished the salad with lightly toasted sliced almonds.

Muhammara Recipe (Walnut and Pomegranate Dip) Recipe

Muhammara Recipe (Walnut and Pomegranate Dip)

01.21.14 by Jackie

I had never heard of or tasted muhammara before until I met the folks at California Lavash. Every time I met with their team, I would hear how exquisite it tasted. In all seriousness, when you hear about a combination of walnuts, charred red bell peppers, fresh pomegranate seeds, lemon juice, garlic, mint, salt and pepper, it’s difficult to imagine how it couldn’t taste amazing!

To thicken the texture of the dip, I added bread and extra virgin olive oil, and balanced the flavors with dates, a hint of ground cumin and red chili powder. You could use it as a dip served with toasted pita bread or cucumber and celery sticks but in my case, I used it as a spread for a roasted lamb sandwich. It was delicious!

Festive Christmas Salad Recipe Recipe

Festive Christmas Salad Recipe

12.11.13 by Jackie

I wanted to create a festive, yet exotic salad in anticipation of the holiday season. So I prepared a homemade crouton, crab, mango and pomegranate salad. It was especially easy to prepare, and I completed it in no time as I used store-bought, pre-cooked crab. I also used the last pomegranate in our garden. The sweetness was incredible.

I think this salad will really light up our Christmas table this year. Not only it is nutritious, complete and healthy, but there is added significance for me because it combines ingredients from all the cultures in my home: French (croutons, Herbes de Provence and pomegranate), Vietnamese (green mango and crab) and Indian (fried paneer cheese). How delicious does that sound?

Here's a recipe for a delicious, inexpensive and healthy dish. I prepared a simple cauliflower salad with two entire heads of cauliflower. The wow factor resides in its delicious salad dressing; I made it with roasted bell pepper, which gave a warm and inviting tone to the dish. Additionally, I used pine nuts for extra creaminess and a more complete protein source.

Stay tuned and check out what I pair the red cauliflower salad with tomorrow. If you like meat, I promise you won't be disappointed!

Salmon Orzo Salad Recipe Recipe

Salmon Orzo Salad Recipe

10.22.13 by Jackie

Today, I prepared a salmon orzo pasta salad. The dish is fairly simple. I broke baked salmon into large pieces and combined them with orzo pasta and a variety of vegetables such as zucchini, corn, roasted bell peppers and string beans.

Baby Aria has a good appetite and given that she's more of a toddler now, she’s able to eat whatever we eat. She's becoming independent and discovers the textures, colors and tastes of new foods every day, especially since she's able to pick up food with a spoon and eat by herself. With dishes like this one, feeding kids nutrient-rich, colorful foods couldn't be easier!
