Polenta Burger Recipe

I think I've said in previous posts that my mother-in-law recently discovered she was gluten intolerant (when she decided to become a vegetarian a year ago) . Her diet has changed drastically but we try to keep her palate happy. Here's a gluten-free dish that doesn't leave her missing bread or pasta. I pan-fried pre-cooked polenta medallions and used them as a substitute for the burger buns. I topped them with melted provolone cheese, sautéed baby spinach and soyrizo (you can replace with real meat).

I served the polenta burgers with steamed vegetables, so we had a delicious light meal that fit everyone's diet in our home. My mother-in-law has been adjusting to her new diet very well these days, although I have to admit it was so cute but kind of sad catching her smelling and "hugging" freshly-baked loaves of bread in the kitchen over the weekend.

Dairy Free Lychee Coconut Cooler Recipe

At Cost Plus World Market, I recently discovered a 100% lychee juice drink with no preservatives and no sugar added. As soon as I came home, I began brainstorming and came up with this deliciously, refreshing drink. It's made of coconut milk, lychee juice and sugar cane juice. The concoction is that wasy. It's really about the correct proportions and you could even add a few ounces of rum to spike it up.  Plus, it's dairy free!

If you're like me and don't have the patience to wait until the drink is chilled, simply add a few ice cubes and mix it in a cocktail shaker. It makes the perfect warm weather treat, almost like finding an oasis in the middle of the desert. So you can relax and pat yourself on the back for a well-crafted lychee coconut cooler.

Apricot Dessert Cup Recipe

Growing your own fruit is such a blessing. Really the only inconvenience is when the birds beat you to the harvest. Our solution this year is our new puppy, Earnest Tofu. In addition to having our friendly family pet who's a wonderful deterrent for birds, squirrels and pests, we're able to pick the fruits when they're not fully ripened from the tree.  For optimum flavor, we speed up the process by placing them in a paper bag with a banana and an apple. Then every day I check their status; it takes patience to get to eat the most delicious fruits!

I was recently able to gather many apricots, so I made my favorite dessert to serve at our dinner social: dessert cups. I used chocolate rum sauce between layers of gingersnap cookies and apricot custard.

Our newest addition to the family (this was taken back in March). Earnest Tofu was named after Oscar Wilde's comedy (one of our family's favorites) and "Tofu" because most of our family members (except for baby Aria and me) are vegetarian!

Our family loves corn. I'm planning a barbecue pool party this weekend and I was browsing through recipes using corn to find inspiration. There are so many way to prepare corn. You could make a charred corn salad, use frozen or canned corn kernels for salsa, make a delicious broth with the cob, grill it whole or even make Vietnamese desserts. We love to nibble on them.

I gathered a dozen corn recipes. Hope this inspires you to create more new dishes and experiment with summer's golden vegetable.

Strawberry Iced Tea Recipe

It's already our third day in Rome and I have to say the weather is really hot. So hot that pesky mosquitoes bit baby Aria and me so much! My husband Lulu says it's because we're so sweet. I like to think it's because of the things we eat and drink. Speaking of sweet drinks, I prepared a large pitcher of strawberry green tea for the family to enjoy after our visit to the Vatican.

The recipe is ultra easy. I steeped green tea leaves and added fresh, flavorful strawberries and freshly squeezed lemon juice.
