Dairy Free Lychee Coconut Cooler Recipe

At Cost Plus World Market, I recently discovered a 100% lychee juice drink with no preservatives and no sugar added. As soon as I came home, I began brainstorming and came up with this deliciously, refreshing drink. It's made of coconut milk, lychee juice and sugar cane juice. The concoction is that wasy. It's really about the correct proportions and you could even add a few ounces of rum to spike it up.  Plus, it's dairy free!

If you're like me and don't have the patience to wait until the drink is chilled, simply add a few ice cubes and mix it in a cocktail shaker. It makes the perfect warm weather treat, almost like finding an oasis in the middle of the desert. So you can relax and pat yourself on the back for a well-crafted lychee coconut cooler.

My husband's teenage sisters are going through a smoothie phase; they are obsessed with blending everything and anything at all times. They've been concocting many smoothies recently. I suggested they try to balance the sugar levels (by avoiding too much sucrose) and pack the drinks with superfoods and antioxidants from fresh fruits and veggies. Extra nutrients such as flax or chia seeds are a plus. 

I've gathered a long list of kid-friendly smoothies for the girls and you to see. Please keep in mind, especially at a young age, the purpose of the drink is to feel good, improve your helth (without necessarily having the focus of weight loss), get a glowing skin and of course, enjoy a delicious treat!

Several times a week, I take little Aria to "Toddler Story Time" classes, which she enjoys tremendously. The theme these days is about the fall season. Miss Rose, the teacher, explained that leaves begin to change color and Aria seemed mesmerized by all the changes this season suggests.

When we went home, she made a drawing with trees and leaves. While she was busy, I made a pumpkin smoothie for a tasty seasonal treat. Then I told her we'd start cooking more fall-flavored dishes to satisfy her daddy's seasonal holiday cravings. For now, I'm sharing with you delicious drinks to enjoy this pre-holiday time.

My friend Carole and her husband have been so keen on making juices, she often gives me suggestions on how to create new drinks with my powerful blender. Today's healthy juice is a blend of pure, freshly pressed apple juice, fresh cucumbers, baby kale, spinach leaves, lime juice, chia seeds and a lot of ice cubes. 

The chia seeds add a beautiful consistency to the juice, which can otherwise seem a little flat. They are loaded with health benefits, so if you want to start the day on a wonderful note, take a few minutes to prepare this "superfood" drink and remember to consider adding more greens to your daily life.
