Fried Egpplant with Balsamic Coffee Reduction Recipe

Fried Egpplant with Balsamic Coffee Reduction

08.18.14 by Jackie

This recipe is heavily inspired by an antipasto we had during our family trip to Italy last month. I didn't think "melanzane all'aceto balsamico", or eggplants with balsamic vinegar, would give me much of a thrill. But I was blown away by the flavor of this simple preparation with minimal ingredients. I decided that when I got back home, I’d prepare a similar starter dish.

First I pan-fried tender eggplant slices, then coated them in a balsamic reduction flavored with garlic, fresh oregano and dark, bold coffee. To provide a great contrast of color and texture, I topped the very nice and tasty eggplants with crumbled goat cheese, sweet basil and chocolate-covered coffee beans as a reminder of the flavor of the reduction.

It's the first time since the launch of PhamFatale.com that I've been away for so long. I've been swamped with work and my personal life is so chaotic these days, I didn't have a minute last week to be in front of the computer. I want to announce that I just completed my first, professionally filmed episode of a new cooking series. We worked day and night and finally wrapped the 20-ish-minute episode after taping on the last day for more than 15 consecutive hours, until dawn. It was challenging but it really gave me an insight into what really happens behind the scenes. A lot of mishaps happened on the first days (broken glass, crickets, yellow jackets and wildlife were part of the fun), but overall it was such a positive experience.

Thanks to the amazing filming crew, I had a lot of fun in a very friendly atmosphere. To show my appreciation, I concocted and packed a full meal for each member so I could be forgiven by their spouses after taking them away for such long hours. Thank you so much Polar Production Team for your professionalism, hard work, dedication and most  of all for believing in me. You guys rock!

Balsamic Marinated Eggplant Recipe Recipe

Balsamic Marinated Eggplant Recipe

04.22.14 by Jackie

It's Earth Day and the girls' school holds many events to educate them about how they can demonstrate support for environmental protection. Sunny, my 18-year-old sister-in-law,  made a vow to go vegan this week. So the idea behind this summery dish is to highlight the beauty of fine balsamic vinegar while keeping the rules that are set for Earth Week in support of what's being done worldwide. For this dish, I simply sliced large meaty eggplants and sprinkled salt over them to draw out the moisture and prevent any bitter taste or soggy texture. Then, the only thing that mattered was the flavors for the marinade.

I used quality balsamic vinegar, a bit of unsweetened cocoa, Dijon mustard as a binder, curly parsley for color and pine nuts for garnish. My favorite pairing with this dish is seafood. Stay tuned for tomorrow's recipe and see what kind of fish I cooked.

Eggplant Lasagna Recipe Recipe

Eggplant Lasagna Recipe

04.07.14 by Jackie

If you're serving a large crowd and are short on time, here's an ideal dish to prepare. Lasagna is my go-to dish when we throw a party. I prepared the white sauce in advance and grilled the vegetables ahead of time as well. Since it's Meatless Monday, I kept the meal vegetarian, adding  only grilled eggplant.

The sauce is a combination of the white sauce, ricotta cheese, Asiago cheese, thyme and oregano. To ensure easy clean-up, I first greased a chafing dish with a thin layer of butter and spread flavorful tomato sauce on the bottom. I baked the lasagna in the morning and finished browning the top 30 minutes before the party started. Once my guests arrived, I lit the chafing dish  fuel. This method lets you serve a piping-hot, stress-free meal in virtually any setting.

Eggplant Pasta with Sun-Dried Tomato Sauce Recipe

Eggplant Pasta with Sun-Dried Tomato Sauce

This is my go-to winter dish. It's filling, creamy and incredibly delicious. I sautéed penne pasta with grilled eggplant and covered both in a sun-dried tomato sauce.

Sun-dried tomatoes add wonderful color to the sauce. You don't need to add a lot because their flavor is pretty robust and concentrated with an exquisite hint of saltiness. I selected penne pasta because the shape enables the sauce to coat and penetrate the pasta so each bite is extra scrumptious.

Roasted Whipped Eggplant Dip Recipe Recipe

Roasted Whipped Eggplant Dip Recipe

10.29.13 by Jackie
Today, my husband Lulu came home a little earlier than I expected. While he played with baby Aria, I concocted an easy dip for them to munch on before dinner. First, I roasted an eggplant. I let the eggplant cool and gathered the pulp. Then I mashed the mixture with the back of a fork, which was a reasonable substitute for a good arm workout (I'm finally back to my gym routine. Yay!). Lastly, I incorporated whipped cream for a light, almost airy eggplant dip.

I served the dip with warm pita bread and Persian cucumber sticks. If you'd like a fancier look, you could use it as a filling in phyllo dough cups or pre-baked puff pastry tartlets. Either would be an elegant item to serve at parties.
