Peppermint Bark Pecan Pie Recipe

Last night, we served pecan pie at the end of our Christmas Eve dinner, but it wasn't your usual pecan pie. This one had peppermint bark nested at the bottom of the crust. The idea was to combine all the elements of a holiday assortment in one dessert. 

To do so, I melted dark chocolate and added crushed peppermint candy canes, then smeared the pie crust with a thin layer of the peppermint bark. To complete the dessert, we offered eggnog to those who wanted a drink and peppermint ice cream to the others.

Maple syrup is a staple breakfast item in our pantry. We usually use it as is to drizzle over pancakes and waffles, but since we had extra pecans for Thanksgiving, the girls and I prepared pecan squares flavored with our favorite syrup.

The topping is made of a mixture of maple syrup, of course, orange zest, brown sugar and loads of pecans. I usually bake these squares during the Christmas season.

Orange Pecan Pie Recipe

 During Thanksgiving, we usually end up so full that we don’t eat the desserts until the following day. This year I'm planning on serving miniature pecan pies so everyone can enjoy the dessert on Thanksgiving Day. Pecan pie is my husband Lulu’s favorite Thanksgiving treat, and I hope he enjoys this version flavored with orange and date syrup. The key to any pecan pie is to overload the pecan flavor, which is my primary objection to  the ones sold in bakeries. The reason is probably that pecans are so expensive. 

The citrus flavor comes from the combination of orange concentrate and orange peels. It gives the pie just a hint of tartness to cut through what is admittedly a very sweet dessert. So this Thanksgiving, consider going mini for your desserts. You and your guests will love them!

Chewy Pecan Caramels with Cardamom

The key utensil for making chewy caramels is a candy thermometer, as it's the only way to control the temperature of the sugar. A few degrees too high and the candies become hard.   

On a recent trip to San Antonio, we discovered these delicious Texan Pecan praline specialties. We brought a lot of boxes home but unfortunately they disappeared fast. Whenever my father-in-law or my husband come back from a trip to San Antonio, they bring back a boxes of the wonderful Texan delicacies. My mother-in-law always asks: "Honey, did you bring home my "magazines" from your business trip?" She refers to them as magazines because if the kids hear that there are caramels in the house they gobble them up right away.

This recipe is the result of several attempts to make the candies at home. To add my own touch, I flavoured the caramels with cardamom which pairs incredibly well with the crunchy roasted pecans. Until my father-in-law or my husband go back to San Antonio for their work, our family can enjoy these homemade caramels; they're perfect for the holidays!

Roasted Beet Salad with Feta and Candied Pecans

Roasted beet salad is a first course I serve often when we host dinner parties. It has great visual appeal. The dish doesn’t just have good looks though. The roasted beets are incredibly flavorful and they pair wonderfully with many ingredients. I've used them in risotto, gnocchi pasta and salad. To give the beet salad a rich mouth-feel, I added garlic-and-herb-flavored feta cheese and spicy candied pecans (I recently used them as garnish for pumpkin mousse) for crunch.

If you're planning a buffet-style dinner, you could serve the beet salad in endive or mini butter lettuce leaves as a "cup". Just spoon the mixture onto the leaves and chill for an hour before serving. When you're ready to serve, drizzle with the vinaigrette. Voilà!
