Mushroom Crostata Recipe Recipe

Mushroom Crostata Recipe

I think a mushroom-filled crostata would work wonderfully. The rustic look of the free-form savory pie and the earthy flavors of the five londs of mushroom used go hand in hand. I also added a bit of sharp Cheddar cheese for its melty, stringy and delicious qualities.

The reason I used that many mushrooms (shiitake mushrooms, Portobello mushrooms, beech mushrooms, Boletus mushrooms and fresh white button mushrooms) is because we're going on a family vacation for Spring break to San Antonio , Texas --follow me on Twitter and Facebook to see more pictures-- and my mission was to "empty" our refrigerator. You could add pancetta to the mushroom filling if you don't mind the dish being non-vegetarian. It gives a subtly sweet, salty note, which is very pleasant.

Almond Tea Cake Recipe

I don't make these sweet treats too often, because in my opinion (being from France where pastries are subtly sweetened), they're a tad too sweet. But they're perfect with a hot of cup of tea and I know my husband Lulu loves them. The concept of these cookies is to create an absolute overload of almonds. The cookie dough is made of chopped almonds, marzipan (honey and almond meal), almond extract, powdered sugar and a strong, floral honey.

I got the girls involved in rolling the cookies into balls and coating them in powdered sugar prior to baking. And once the cookies were baked, the girls dunked them one more time in powdered sugar to resemble snowballs.

Roast Beef Pot Pie Recipe Recipe

Roast Beef Pot Pie Recipe

04.11.13 by Jackie

As I expected, two people weren't able to finish the 1½ pound pot roast I prepared yesterday. So what to do with the leftovers? Make pot pie, of course! Especially since it's National Pot Pie Month.

I took the leftover beef and gravy and added frozen peas and carrots. I used store-bought puff pastry and made pot pies. The flakiness from the crust and the creamy filling made the most delicious meal. I prepared them in individual metal tins so each person gets more puff pastry. How could anyone resist?

I served the pot pies with whole baby corn. I was able to find some at my local Asian market despite the season (check for Melissa's baby corn brand).

Beef Pot Roast Recipe

I don't know why I don't make this dish more often. It's inexpensive and so good. There are really only two meat eaters in our home, but with baby Aria growing up so fast, I felt she was old enough to try this dish. I used a fairly small cut of beef chuck, seared it to form a crust around the meat, then wrapped it papillote-style in aluminum foil, added beef stock and a few earthy vegetables around it and roasted it for a few hours.

The meat came out fork-tender; no knife was needed. And if you were curious to know if a 17-month-old could enjoy pot roast, well, Aria really liked it. She is not a big meat eater, but she does seem to have a taste for beef.

I served the pot roast with baked potatoes and creamed spinach. That's what I call pure comfort food!

Note: Check out my beef pot pie recipe using the leftovers the next day.

Crab Appetizers (Savory Cheese Cookies) Recipe

Crab Appetizers (Savory Cheese Cookies)

04.09.13 by Jackie

If you've been following my culinary adventures for a while, you probably know how much I love seafood. There's a French word "gourmande" that merely translates to "greedy" and I think it accurately sums up my personality when it comes to les fruits de mer (seafood). Thus it was fitting that at the Asian market this week I bought way too many crabs (again)!

Lulu's grand-uncle, who also enjoys crab, came to visit us, so I made a few crab appetizers for him. At first, I didn't know how I was going to present the crab, but I finally settled on savory "cookies" flavored with Dubliner cheese. A bit of cottage cheese serves as the "glue" for the whole appetizer, and the depression in each cookie is perfect for a spoonful of crab meat.
