Fig Sablé Cookie Recipe

Sablé cookies are French-style shortbread sweet treats that are very popular in Bretagne (Northwest part of France). Ideally, I make them with good quality yellow butter from Normandy and a hint of sea salt. 

This time, I had a large bag of dried Calimyrna figs and flavored the sandy cookie dough with them. You could use whatever dried fruit you prefer. The cookies are mildly sweet and go wonderful with tea.

I had a lot of leftover soaked chickpeas after making chole (spicy Indian garbanzo beans), so I prepared a simple chickpea soup. I added potatoes that are invading part of our garden now, onions, a touch of lemon and whatever vegetables I was able to find in the kitchen (frozen corn, carrots and roasted red bell peppers). The result was surprisingly fabulous, especially since it's gluten free, dairy free and low fat. You could sprinkle a few Parmesan shavings for added richness if you like, but since there’s no photographic evidence, I’m going to say I didn't!

I prepared the chickpea soup with the idea that it was going to be for baby Aria, but all the grown-ups in our home enjoyed it just as much as she did. She's old enough to eat meat, fish and other solid carbs but I still prepare soups for her several times a week to ensure she doesn't go too hungry. According to my husband Lulu, she's plenty chubby but I guess through a mommy's eyes, there's always the fear of not providing enough for your baby.

Bell Pepper Ricotta Pesto Tart Recipe

This is the type of light meal I love for lunch. It's satisfying, filled with vegetables and it's a one-dish meal, which means less cleanup! The tart is flavored with red and yellow bell peppers combined with ricotta and Parmesan cheeses, onions, tomato paste, chili flakes and fresh oregano. To complete the dish, I topped the savory tart with mixed greens and flavorful dressing.

You can use the same bell pepper ricotta pesto to flavor your favorite pasta, grilled meats, risotto or sandwiches.

Canh Bun Recipe (Vietnamese Soup)

Canh bún is a simplified version of bún riêu. It has a similar, red-colored sweet broth except it doesn't contain tomatoes. The soup is also softer in texture; round, thick noodles are used and fried tofu pieces and rau muống (pea shoot tendrils) are added at the last minute. 

Traditionally, pork is used for canh bun but I prefer cooking with veal instead. You could stick to the more authentic version or use other meat and add riêu (crab morsels) as well.

Fig and Goat Cheese Phyllo Cup Recipe

This is a very easy appetizer recipe. All you need is phyllo dough, fresh figs, dried figs, goat cheese and a bit of sugar. I "bruléed" the fresh figs to add another dimension of flavor and served them in the cute phyllo cups. 

It feels like the end of the summer already; figs are already peaking and I'm anxious to cook with what's ready to ripen on our trees. I'm so excited and I can't wait!
