Basil and Pineapple Cookie Cake Recipe Recipe

Basil and Pineapple Cookie Cake Recipe

08.23.13 by Jackie

This cookie cake recipe closes our week featuring Boyajian exquisite oils and vinegars. I was inspired to make this recipe by Martha Stewart's giant chocolate chip cookie cake. I used the basil oil both in the cookie dough, which by the way contains no butter, and the mascarpone cheese filling.

To repeat and reinforce the flavors in the filling, I deep-fried basil leaves, coated them in raw sugar, crumbled them and mixed them into the mascarpone filling. I also included freshly chopped ripe pineapple to add some sweetness to this gourmet dessert.

Happy weekend everybody!

Chia Seed Blueberry Tea Drink Recipe Recipe

Chia Seed Blueberry Tea Drink Recipe

08.22.13 by Jackie

This morning, Lulu's 13-year-old teenage sister Mimi and I woke up in the wee hours of the morning and prepared a drink so we could have enough energy before our yoga routine. The drink was very refreshing, delicious, rich in antioxidants and made with natural ingredients such as chia seeds, fresh blueberries, oranges, green tea, ghee and maple syrup.

This special concoction was Mimi's idea, and I adore it. It doesn't require too much sweetener thanks to the blueberries and chia seeds, which add another dimension to the tea drink. Isn't it wonderful to start the day in a healthy way? Plus, it's gluten free!

Mi Xao Chay Recipe (Vegetarian Soft Egg Noodle Stir Fry) Recipe

Mi Xao Chay Recipe (Vegetarian Soft Egg Noodle Stir Fry)

08.21.13 by Jackie

I love making noodle stir fry. It may seem a little complicated but if you're methodical, you'll be able to master this dish in no time. What makes this noodle dish special is the use of pineapple both as an ingredient and as a seasoning for the noodles themselves.

First, I prepared the green bean and tofu stir fry and set it aside. The next step is boiling the fresh egg noodles, then cooking the pineapple (trái  khóm in Vietnamese) in a thick sweet and sour sauce. Finally, all you need is to toss the noodles in the sauce and add the tofu and green beans.

Summer Salad with Spiced Lemon Coffee Vinaigrette Recipe

Summer Salad with Spiced Lemon Coffee Vinaigrette

08.20.13 by Jackie

This delicious, summery salad makes good use of fresh, crisp ingredients. I also added red quinoa, avocado, fresh mozzarella cheese, fried tofu and chicken pieces to complete the nutritious salad. To put it over the top, I drizzled the salad with an incredible lemon and coffee-flavored vinaigrette.

I was inspired to make the dressing by our trip to Italy two years ago. While on our vacation, we had the opportunity to try spiced citrus coffee. It was absolutely terrific and fairly commonplace; similar flavor combinations can be seen in many coffee cakes and biscotti cookies. I was able to recreate the flavors found in these Italian dishes using Boyajian coffee vinegar and pure lemon oil. I also added extra lemon zest to brighten the vinaigrette.

The vinaigrette itself would also make an excellent marinade for chicken, steaks or root vegetables.

Scallion Kidney Bean Burger Recipe Recipe

Scallion Kidney Bean Burger Recipe

08.19.13 by Jackie

These veggie burgers are prepared with gluten free bread. I made scallion-flavored croutons out of the bread and mixed them with kidney beans. I served the burgers on a bed of scallion and maple-flavored barbecue sauce; if you were putting these patties in a bun, you could always slather the sauce on the inside of the bun instead of on the plate. No mustard or mayo required!

Unlike many vegetarian dishes, these burgers won't leave you dreaming of meat. The texture is interesting and non-uniform, and the flavor is in your face. It's not a meat substitute, but rather a unique dish unto itself. I don't think meat would add anything to the patties and even the most ardent of carnivores should be able to enjoy them as is. Ok, maybe next to a steak or something. But they'd still enjoy it!

The scallion flavor in this recipe is courtesy of Boyajian's fantastic Scallion Oil. Boyajian has an impressive array of oils, vinegars and vinaigrettes with some pretty exotic flavors. I love infused oils, and have been playing around recently with some of the products in Boyajian's lineup. Boyajian sponsored my development of recipes with their products and of course photographs of the dishes. I'll be sharing my culinary creations with you this week, and (shameless plug), if you'd like to try out any of the products, you can purchase them directly from Boyajian's website.
