Quiche Forestiere (Mushroom Quiche Recipe)

Quiche is a typical savory French pastry. In case you’ve never had one, it's an open-faced egg and cheese filled savory tart. This particular recipe is for a rustic, mushroom-filled quiche called quiche forestière. It can be served warm or cold and it's perfect for a picnic.

After attending my friend Alexia's wedding in the countryside this weekend, we're back in Paris and spent the day at the Jardin des Tuileries with baby Aria. Later, we headed to the Carousel and she adored riding the  merry-go-round horse. We stopped for lunch at a lovely boulangerie in the 4ème arrondissement on 4, rue du temple. We had an amazing croissant aux amandes (almond croissant), pain au chocolat (chocolate croissant) and quiche.

During our trip to Paris, I'm going to post a lot of French-inspired dishes. To end the week beautifully, let me share with you a typical French sweet treat: pot de creme. I figured this individual dessert can get a little heavy so I "lightened" it up by creating a small cavity in the center and filled it with freshly-crushed raspberries. The acidity from the fruit contrasts wonderfully with the sweetness of the custard.

Sounds easy, no? Get ready to get a lot of ooohs and ahhs with very minimal effort!

I've just touched down in France! We landed a few hours ago and I'm ready to go to sleep, but before heading to my old childhood bedroom, I wanted to share with you a savory appetizer recipe that was inspired by a North African dessert called chebakia. I grew up in a suburb of Paris and I often enjoyed North African treats after school. This takes me back!

I used store-bought puff pastry and folded it in the same manner as the Moroccan sesame-spiced cookie (chebakia is folded in the shape of a flower, fried and drizzled with honey), then used an edamame and artichoke filling. It might look all fancy but it's very easy and delicious.

Saffron Carrot Orzo Risotto Recipe

I usually cook risotto when I want to make good use of excess pantry staples in my kitchen. In this risotto, instead of using rice, I selected orzo pasta. I kept the dish vegetarian and flavored it with saffron, carrots and very little Pecorino cheese. 

To ensure a good, creamy consistency, I moistened the orzo risotto with white wine, homemade vegetable stock and a dab of butter.

I find that the combination of butter and shallots makes for the most flavorful dishes, and this is no exception. The risotto was so exquisite, I served it as the main course. It's filling and delicious; you won't be disappointed.

Zucchini Tofu Recipe

This tofu stir fry dish is a staple in our home and I make it at least once a month. It's quick to prepare, flavorful and packed with fresh green vegetables. I pan-fried tofu pieces and tossed them with onions and zucchini slices in a thick sauce (I used tapioca starch as the thickening agent).

My parents are excited to spend time with little Aria this month; they haven't seen her since she was 11 months old. I've been so busy these past few days wrapping up work and packing for our trip to Paris, that I completely forgot about picking our vegetables. There have been beautiful zucchini waiting to be harvested and I was so excited to be able to cook with them. So it was a real bummer this morning when I found wilted, unusable zucchini flowers. I still harvested the large zucchini and prepared it with tofu. It's not an elaborate meal but it's tasty and nutritious.
