Papaya Roasted Fennel Pasta Recipe

This is another dish I prepared during our Roman holiday. I used "artigiano pastaio"-type pasta (prepared by an "artisan expert"). I selected farfalle, the kind shaped like a bow, and used them as a main dish. I flavored them with thinly-sliced fennel bulb and ripe papaya.  

The preparation is fairly simple. I roasted fennel that I coated in papaya and ginger purée, then added the  vegetable to the pasta. The licorice flavor from the fennel and the natural sweetness from the papaya created a unique, extraordinary-tasting, delectable pasta dish.

It's already our third day in Rome and I have to say the weather is really hot. So hot that pesky mosquitoes bit baby Aria and me so much! My husband Lulu says it's because we're so sweet. I like to think it's because of the things we eat and drink. Speaking of sweet drinks, I prepared a large pitcher of strawberry green tea for the family to enjoy after our visit to the Vatican.

The recipe is ultra easy. I steeped green tea leaves and added fresh, flavorful strawberries and freshly squeezed lemon juice.

Italian Tomato Bruschetta Recipe

During our trip to Florence, we were able to cook a few meals at home, sampling local ingredients. We lived right in the heart of Firenze and while preparing dinner, I sent my husband Lulu out to find a rustic bread. He ended up in a "panificio" (bread bakery) and asked the baker for his most popular bread. Lulu came home with a giant loaf of Tuscan-style bread, which I sliced into thick, crusty pieces and prepared bruschetta.

Bruschetta basically consists of grilled bread rubbed with fresh garlic and topped with tomatoes, olive oil, salt and pepper. I upped the flavors with roasted garlic and loads of fresh basil.

Italian Corona Bean Salad Recipe

For those of you who recently started following me on Instagram, you've probably noticed our family is traveling in Italy. We landed in Rome and took a train to Florence. We wake up early in the morning to start our sightseeing, visiting the most incredible places such as Palazzo Vecchio, Pitti Palace or the Duomo and going to the most fabulous restaurants. I also wanted to check out the Mercato Centrale where I bought Corona beans. They're considered the "poor man's meat" and have a very starchy texture. So when I prepared a simple, supersized bean salad, the beans gave incredible body to the salad.

I added marinated olives, artichoke hearts, freshly-made buffalo mozzarella cheese and loads of fresh sweet basil and parsley.

Red Bell Pepper Mayonnaise Recipe

I recently bought beautiful jumbo artichokes at Costco. I would normally steam them and pair them with an aïoli sauce to dip the artichoke leaves in, but today I felt like making a roasted bell pepper flavored mayonnaise

The result is a creamy, tasty sauce with an appealing, bright red color. As a reminder of the flavor in the sauce, I garnished the top with the finely chopped roasted bell peppers.
