Caterpillar Roll (Avocado Sushi Recipe) Recipe

Lulu and I recently went to a Japanese sushi bar and enjoyed platters of delicious rolls. When I came home, I was determined to serve the same gorgeous-looking sushi for the family. I reinterpreted the caterpillar sushi with a combination of hoisin sauce and kaffir lime sauce. The caterpillar outer layer is imitated with thinly sliced avocados. Unlike most of the "fancy" sushi rolls you'll find at restaurants, this one's vegetarian.

I have to admit I was very proud of how they turned out. And to my surprise, it wasn't that complicated. Sometimes, improvisation ends up with beautiful results!

Mushroom Crepe Recipe (Crepe Forestiere) Recipe

In less than 3 weeks, La Chandeleur is going to be celebrated in France. It originially was a religious event (40 days after Christmas) but nowadays, it's become a more commercial celebration). Crêpes are traditionally served on the holiday, which gives me an excuse to flip some crêpes for my family. I know that making crepes is intimidating for a lot of people, but I have prepared crêpe batter countless times and I promise it's easy to master, and with a little bit of practice you'll have no problem with it. 

In general, for La Chandeleur you'll see them served as dessert, either with fruit and cream or simply sweetened with a sprinkle of sugar. Savory versions (ham and cheese is a staple), however, are not uncommon. This recipe is for a "forest"-style crepe, which means it's filled with mushrooms and it's also known as beggar's purse. I added a few roasted chestnuts and garbanzo beans for extra protein.

Apple Hazelnut Cake Recipe (Eggless Dessert) Recipe

Whether served with a scoop of vanilla ice cream, crème anglaise or simply a dollop of Greek-Style vanilla yogurt, this apple hazelnut cake will satisfy your sweet tooth. What I love most is the contrast in texture of the crisp, buttery top and the moist interior.

I flavored the cake with Red Delicious apples. I chose this particular variety because of their firmness and beautiful bright red color. I usually use them in salads or eat them as is but they also work well in these baked goods.

The girls have been working out hard this week and asked if they could break their healthy routine with some sweets. I'm so happy they decided to join me in my workout routine and thought they deserved a little reward. They're teenagers after all. As you can probably tell by our meals, we don't really diet, though I try to find healthier alternatives as long as they don’t sacrifice flavor. After enjoying these treats, the girls and I hit the gym and enjoyed 30 minutes of pure Stairmaster fun!

Roasted Butternut Squash and Raw Kale Salad Recipe Recipe

I made a crisp, raw kale salad with roasted butternut squash, toasted pine nuts and crumbled gorgonzola. It’s a one-dish meal you can make in large batches, pack in tupperware and eat when you're on-the-go. 

I flavored the salad with a yogurt dressing and a touch of gorgonzola for extra flavor. The health-conscious can omit the cheese, of course.

I hope you all had a fun-filled New Year's Eve with your friends and families. What did you do to ring in the New Year? We had some family time at home. It may sound lame, but we watched "Murder on the Orient Express,"trying to solve Hercule Poirot's investigations (it’s so much easier when you’ve seen the movie like a dozen times ) while enjoying all the baked goods the girls and I have been concocting all week.

2012 was an incredible year for me. I feel so blessed and lucky, watching my daughter grow into an adorable toddler. And then there’s the publication of my first cookbook. I am so grateful for all the blessings that I have in my life. Thank you so much for your love and support. Here’s to making 2013 as unforgettable as 2012!

Back to today's dish. The girls' resolution is to lose as much weight as I did last year when I was working off my baby weight. I'm helping them by cooking healthy, yet still flavorful meals. One such concoction is today’s recipe: light red kidney bean patties wrapped in crispy bean curd. The filling is made of mashed kidney beans with panko breadcrumbs. The legume provides a sufficient amount of protein so the girls have enough energy throughout the day and the crispy outer layer provides a pleasant contrast of texture. For a healthy and complete meal, serve it with some brown rice and a dash of soy sauce. Enjoy!
