Passion Fruit Parfait Recipe Recipe

Passion Fruit Parfait Recipe

01.24.14 by Jackie

After my cousin Tri, whose wonderful neighbor owns several passion fruit trees, gathered a large basket of the fruit, I couldn't help but imagine the most delicious, exotic and romantic dessert. I figured chocolate was the perfect flavor pairing for this dessert cup, so I created chocolate and passion fruit parfait. Not only is the dessert decadent and delicious, nothing has to go to waste. I used the egg whites that weren't used in the custard and made tuile cookies.

I prepared these fancy desserts for a dinner social we're hosting this week, but I think they would be the perfect way to end a romantic meal. Remember, Valentine's Day isn't very far away!

Shrimp in Pomegranate Sauce Recipe

Shrimp in Pomegranate Sauce

01.23.14 by Jackie

I've become addicted to pomegranate lately and I figured if it was good in a spread, it would go just as wonderfully with seafood because of its sour, tart and slightly sweet flavors.

First, I sautéed the shrimp in garlic until fully cooked, then covered them in a thick pomegranate sauce, which consisted of fresh pomegranate seeds, of course, and caramelized onion puree. The onions helped balance the sweetness of the sauce while also giving it a thicker texture.

Tet Celebrations: Vietnamese Dessert Recipes Recipe

We're a week away from the Vietnamese New Year celebrations (called Tết). I've decorated the entrance of our home with cherry blossom flowers that I decorated with red envelopes that contain "lucky money", called lì xì. I've also picked up brand new dollar bills and placed them in the red envelopes to give to children. The tradition dictates that the first morning of the New Year, adults congratulate children on becoming a year older by giving them these lì xì envelopes.

Many Vietnamese desserts are served as well, before "offering" them to ancestors. I've gathered some of the Asian sweets that are prepared for this celebration.

Muhammara Recipe (Walnut and Pomegranate Dip) Recipe

I had never heard of or tasted muhammara before until I met the folks at California Lavash. Every time I met with their team, I would hear how exquisite it tasted. In all seriousness, when you hear about a combination of walnuts, charred red bell peppers, fresh pomegranate seeds, lemon juice, garlic, mint, salt and pepper, it’s difficult to imagine how it couldn’t taste amazing!

To thicken the texture of the dip, I added bread and extra virgin olive oil, and balanced the flavors with dates, a hint of ground cumin and red chili powder. You could use it as a dip served with toasted pita bread or cucumber and celery sticks but in my case, I used it as a spread for a roasted lamb sandwich. It was delicious!

Asian-inspired Mushroom Tart Recipe Recipe

Being born and raised in France with Vietnamese origins, this mushroom tart perfectly represents my two cultures. And with my husband Lulu being a vegetarian, I wanted to prepare a savory tart that fit his diet.

I prepared a regular butter crust, but I flavored it with green onions and Thai basil. I made the filling with both shiitake and king mushrooms, which have a meaty texture (especially good for vegetarian cooking). I balanced the flavors with five spice powder, sweetened condensed milk as a binder for the filling, garlic, hoisin sauce and rice vinegar. As a reminder of the flavor of the tart, once it was baked I covered it with more sliced mushrooms and added a drizzling of sesame oil for a Vietnamese twist. You could pair it with an Asian peanut red cabbage slaw to complete the meal.
